Ingredients

  1. 6 tablespoons butter
  2. 1 large onion, chopped
  3. 1 green bell pepper, chopped
  4. 3 stalks celery, chopped
  5. 1 clove garlic, minced
  6. 1 tablespoon all-purpose flour
  7. 1 pound peeled crawfish tails
  8. 1 (8 ounce) package processed cheese food
  9. 1 cup half-and-half cream
  10. 2 teaspoons Cajun seasoning
  11. 1 pinch cayenne pepper, or to taste
  12. 1 pound dry fettuccine pasta
  13. ½ cup grated Parmesan cheese

Instructions

  1. Melt the butter in a large skillet over medium heat. Cook onion, bell pepper, celery, and garlic in butter until onions are tender. Stir in flour, and cook for 5 to 10 minutes, stirring frequently. Stir in crawfish. Cover, and simmer for 15 to 20 minutes, stirring often.
  2. Stir in the processed cheese, half-and-half, Cajun seasonings, and cayenne pepper. Cover, and simmer for about 20 minutes, stirring occasionally.
  3. Meanwhile, bring a large pot of lightly salted water to a boil. Cook pasta in boiling water for 8 to 10 minutes, or until al dente; drain.
  4. Preheat oven to 350 degrees F (175 degrees C). Butter a 9×13 inch baking dish. Stir noodles into crawfish mixture; pour into prepared dish, and sprinkle with Parmesan cheese.
  5. Bake in a preheated oven for 20 minutes, or until hot and bubbly.

I made this recipe twice. The first time I followed directions and baked it, but it really dried it out. The second time after reading reviews, I made a couple of changes. I added about a 1/4 c of green onions, 1/2 c fresh parsley and used bow tie pasta instead. It was fabulous! I used the recommended amount of cajun seasonings (I used Slap Ya Mama because that’s what I had on hand) and about 1/2 of the cayenne. I think next time I’ll use all of the cayenne as we like things spicy. Will definitely be making this dish again.

I degorged a whole bunch of spiralized zucchini and threw that in at the end instead of making pasta. It was fantastic. I am NO ghost peppery queen. Habaneros are about as hot as I’m comfortable with but I have a decent Texan tolerance to spice and didn’t think this was spicy at all. Maybe I need to get new cayenne but i added an additional pinch of guajillo chili powder, more Cajun spice, AND a pinch of chili flakes to get more kick.

So I substituted the cheese product with cream cheese, left off the cayenne pepper and Walmart only had 12 oz of craw fish- so we put in 2 containers- had squared spaghetti to use. This recipe was amazing!! We had leftovers and heated it up tonight in the Breville toaster oven. Made a different salad both nights and paired it with a Seaglass sauvigon blanc $8.50. What an amazing meal both nights. This is a definite keeper and worthy of company. Delicious!

Substituted heavy cream, pepper jack cheese, added a ton of fresh grated black pepper, a little diced jalapeno, minced green onions and fresh crab meat. A true gourmet meal!

I used the Walmart brand of veleta cheese 16oz doubled the Recipe and added an extra cup of half and half and used hidden veggie noodles and it was a big hit.. I also already had boiled crawfish from a boil we had on Good Friday .. will definitely make this again

I made this as one of the dishes for my Mardi Gras party and it was a great hit. Everyone loved it. I used H.E.B.’s Easy Melt processed cheese instead of Velveeta and I used 2 cloves of garlic. I will definitely make this again.

Awesome! I used Boudreaux frozen crawfish tails and frozen shrimp from my local Walmart store. My family loved it and my hubby who doesn’t care for seafood or tails went back for seconds. I also used Tony’s Chachere’s Orginal Creole Seasoning and a pinch of cayenne pepper, velvetta cheese, and shredded Parmesan cheese. I will be making this again and again and again.
