Ingredients
- 2 tablespoons butter
- 1/2 cup orzo
- 1 1/2 cups long-grain white rice
- About 2 2/3 cups chicken stock
- A generous handful dried, sweetened cranberries (recommended: Craisins by Ocean Spray)
- 1/3 cup walnut pieces, toasted
- 4 scallions, thinly sliced on an angle
Instructions
- Heat the butter over medium heat in a saucepot. Add the orzo and toast until golden. Stir in the rice, add the stock and cranberries. Bring to a boil, and then reduce heat to simmer. Cover and cook until tender, 15 to 18 minutes. Fluff the rice and combine with walnuts and scallions to serve.

This is the most delicious rice I’ve ever made! Simple and basically fool proof. I used a little more stock to loosen it up a bit at the end. This will be my go to rice recipe.

I made this today and it was delicious!! I skipped the walnuts (I was too hungry) I froze 4 portions for work lunches and may add the nuts immediately before eating. I will def make this again and add other dried fruits such as apricots.
I am always looking for a new rice recipe and I have to tell you this one is absolutely delicious with a very inviting presentation. I made it exactly to Rachael’s recipe and it was (according to my son bomb!! It will now be a regular in my home and it has the capability to be tweaked to many differently levels.
All of Rachael Ray’s rice recipes are outstanding! They give such great alternatives to what would usually be a boring side dish. This one is no exception. It is one of our favorites now and we have it on a semi regular basis. It looks so beautiful too!!
