I reduced the recipe to two sandwiches because many Italian grinder sandwich recipes are designed to feed a large group. The flavor is complete and still tastes great the next day when it’s chilled!

Ingredients
- 1 ½ pounds fresh cranberries
- 2 pears – peeled, cored, and quartered
- 2 Granny Smith apples – peeled, cored, and quartered
- 2 oranges – zested, peeled, and segmented
- 2 lemons – zested, peeled, and segmented
- ¾ cup white sugar
- ¼ cup brandy
- ¼ cup cranberry juice
Instructions
- Combine cranberries, pears, apples, oranges, and lemons in a food processor; grind to a fine consistency. Transfer to a large glass bowl. Stir sugar, orange zest, and lemon zest into the fruit mixture. Add brandy and cranberry juice; stir.
- Cover bowl with plastic wrap and refrigerate for at least 24 hours.

I also skipped the cranberry juice. It had plenty of liquid. I added about a teaspoon of fresh grated ginger, a splash of triple sec and a handful of almonds. My husband said it’s the best I’ve ever made. I can’t wait to taste it at our friendsgiving dinner tomorrow night!
Skipped the cranberry juice. Don’t think it needs the extra liquid. Yummy.
