Cranberry-Orange Relish

Ingredients

  1. One 12-ounce package fresh cranberries
  2. 2 oranges, peeled
  3. 1 cup sugar
  4. 1/2 cup pecans, finely chopped

Instructions

  1. Using a food processor, pulse the cranberries and oranges. Transfer the chopped fruit to a 1-quart bowl and add 1/2 cup of the sugar, stirring to mix. Add more sugar to taste, as the sweetness of the oranges will vary. Add the chopped pecans and serve.

So delicious, and so easy.  There aren’t many recipes that have that combination and are inexpensive as well. I read that the relish keeps for two weeks in the fridge.  This is a perfect recipe, especially because it has that it’s healthy and inexpensive as well. As close to a perfect recipe as I know.

Been doing this for years, but I use the entire orange if the skin isn’t too thick. If so I peel away some, not all. And I use half the sugar and some Monk Fruit. Less sugar that was and still good.

I have done a variation of this for years.
Something else to consider is I often make for Thanksgiving is onion bread using Lipton onion soup mix. Wonderful coming out of the oven and letting butter just melt in.
