This is a tasty meatless dinner that is both simple to prepare and delicious. I prepare a lot at once and freeze what I don’t eat. Then, I simply remove what I require from the freezer, defrost it, bake it, and voilà! Additionally, you may get creative and include different vegetables.

Ingredients
- 3 cups miniature marshmallows
- 2 cups ground cranberries
- ¾ cup white sugar
- 2 cups diced apple
- ½ cup seedless grapes, halved
- ½ cup chopped walnuts (Optional)
- ¼ teaspoon salt
- ½ cup heavy whipping cream
Instructions
- Stir marshmallows, cranberries, and sugar together in a saucepan over low heat; cook and stir until the marshmallows melt completely, about 15 minutes. Transfer marshmallow mixture to a bowl and refrigerate 4 hours to overnight.
- Stir apples, grapes, walnuts, and salt into the marshmallow mixture.
- Beat whipping cream in a chilled bowl using an electric mixer until stiff peaks form; fold into the marshmallow mixture.
- If you can’t wait four hours, chill in refrigerator for 20 minutes instead.

This has been a family and potluck favorite for years. The only thing my recipe does is it uses Cool Whip instead of whipped cream. I did try it with the whipped cream but to me, it didn’t seem to freeze as well as the Cool Whip version.
Delicious, easy and festive!
This is a Thankgiving tradition! Everyone gobbles it up quickly. You can use less cranberries to cut back on the tartness. We use pecans, instead of walnuts. We don’t cook ours. Just mix the ground cranberries, sugar and half of the marshmallows and let sit, in fridge, overnight. Next day we just add everything else. *Warning: it’s best to drink water or unsweetened tea with this salad. If you take a drink of something sweet and then take a bite of this salad, it will definitely make you pucker from the tartness!!*
Loved it for Christmas dinner! I would cut the grapes into fourths, though. Be sure to plan ahead to refrigerate the cranberry mixture. Not one to make in the summer. It is hard to find cranberries then,
I had to use more cream. Overall, it was so good, I was lucky to have enough to take to a pot luck.
Refrigerated the marshmallow, cranberry, sugar mixture for about 6 hours, and it had solidified. There was no way, I’d be able to stir in the apples, grapes & walnuts, so I popped it in the microwave for two 10-second intervals just to soften slightly…it worked. I was able to then fold in the fruit and whipped cream, and it did end up tasting pretty good. Think this would be a good Holiday dessert.
