Cranberry Apple Bread

Ingredients

  1. 2 cups peeled, cored and chopped apple
  2. ¾ cup white sugar
  3. 2 tablespoons vegetable oil
  4. 1 egg
  5. 1 ½ cups all-purpose flour
  6. 1 ½ teaspoons baking powder
  7. ½ teaspoon baking soda
  8. 1 teaspoon ground cinnamon
  9. 1 cup fresh or frozen cranberries
  10. ½ cup chopped walnuts

Instructions

  1. Preheat the oven to 350 degrees F (175 degrees C). Lightly grease a 9×5-inch loaf pan.
  2. Stir together apples, sugar, and oil in a large bowl. Add egg; mix well. Sift flour, baking powder, baking soda, and cinnamon in a separate bowl. Stir flour mixture into wet ingredients until dry ingredients are moist. Stir in cranberries and walnuts. Spread batter into the prepared pan.
  3. Bake in the preheated oven until a toothpick inserted into the center of loaf comes out clean, 35 to 45 minutes.

Notice the batter is thick spread it into pan flatten top with slightly wet fingers also chop apples put the cinnamon sugar on them and let them sit till time to mix of these factors add extra wetness to help mix the better once my batter was crumbly and I did add a teaspoon of water once it was really really wet but every time the bread rose and tasted fantastic the other thing that I had to do was bake it for one hour and a 4 x 8 Bread, pan and I always use glass to cook my bread and a slightly reduced temperature . I’ve cooked this more than 15 times. Every time it is come out perfectly. Just sometimes it can look dry as long as all powders are wet always backed just perfectly!

This bread came out so good! I made a few adjustments: I didn’t measure out the apples, just used 2 McIntosh and didn’t peel them first. I added an extra 1/2 tsp of cinnamon and 2 splashes of vanilla extract. I rough chopped about half of the cranberries before mixing them in as well as putting a handful of them on top of the bread. And I put half the mixture in, sprinkled brown sugar on top, then repeated.

Let the chopped apples sit in the sugar for a couple hours to generate more liquid, otherwise add apple juice or it will be too dry. My second round I added a little lemon juice which was good. Overall great flavor but a bit crumbly, next time I might make it into muffins for easier eating.

This is a great base recipe for a delicious quick bread! I had fresh cranberries and a giant apple to use up. I was concerned about all the reviews saying it was dry, so I substituted 1/4 cup applesauce for the 2 Tb oil, and I weighed my flour (120 g = 1 cup). It actually ended up a little bit too moist! I also added a dash of vanilla and zest from one orange to punch up the holiday flavor. Excellent!

I changed things up a little bit: added dried cranberries, nuts, and chopped dates. Was too dry so I added a splash of Baked Apple Cinnamon Energy V8 drink. Its delicious!!!! I wanted something chocked full of fruit to have with coffee in the morning. This is it!!! Love it!!! Will remake using dates, raisin, nuts and apples next time.

The dry ingredients barely coated the fruit. There was no batter to speak of, just fruit cakes in flour. Strange recipe. I would not recommend it.

Mixing it together it doesn’t seem to have enough batter but it ended up being fine. General review from my family and I agree, it’s a bit wet and mushy. The cranberry is a bit much. If I make this again I’ll personally cut back on the cranberry. It would probably be less wet and less tart. I love cranberries btw, just not in this recipe

Doubled the cinnamon and added some vanilla. It took 55 min to bake in my over though, and it usually runs a bit hotter. Not too sweet, perfect for breakfast!

Great taste after adding 1/2 cup applesauce. The batter was so dry, I thought it needed more moisture. Needed about 15 minutes more baking time but I am at over 3500 feet in altitude.

This was very good and moist. I used gala apples and pecans because I didn’t have walnuts. I followed the recipe as it was written, which is unusual for me. I’m glad I didn’t read the negative reviews before I started because I probably wouldn’t have made it. It was a little difficult to mix because of the small amount of liquid but I’m glad I didn’t change a thing except the type of nut. I’ll make this again. Everyone I shared it with loved it as well.

This bread is a winner! Moist and packed with crunchy walnuts (ok, I may have added a few extra, lol), sweet apples (I did leave the peel on mine), and tart cranberries. So easy to put together, this recipe is going in my binder of favorites!

So I had the same issue with not enough liquid. I just poured water into the batter (probably about 1/3 cup, but I’m not really sure). I just made it a batter-like texture. I then baked the bread for 55 minutes, and it turned out great!

It was good, but seemed to be more fruit than bread? After baking for 40 min, was still somewhat mushy?
