Ingredients

  1. 1 (8 1/2-ounce) package corn muffin mix, mixed to package directions
  2. Softened butter, to grease baking dish
  3. 1/3 pound Monterey Jack or pepper Jack, cut into 1/4-inch dice
  4. 1/2 cup frozen corn kernels
  5. 2 scallions, thinly sliced

Instructions

  1. Preheat oven to 400 degrees F. Grease an 8-inch square baking dish with butter. Stir cheese, corn, and scallions into packaged mixed corn muffin batter.
  2. Pour batter into baking dish and bake at 400 degrees F until golden, 15 to 18 minutes.

Doesn’t get much easier than this. I went with the Pepper Jack cheese. I like sweet cornbread, and I like spicy so this was a hit. I will try grating the cheese next time though. I think it will spread out better that way rather than have cheesy chunks.

I am having to give this a four rating since that is the average for my family’s rating. I like it better than my husband and son, but in fairness, my husband never met a cornbread that he did like. This is a moist and flavorful bread and if you do like cornbread, I think you’ll find this to your liking.
