Ingredients

  1. 1/4 cup sweet relish
  2. 1/2 cup bacon and tomato twist mayonnaise
  3. 12 ounces imitation crabmeat
  4. 1 medium head green leaf lettuce, chopped
  5. 1 medium head iceberg lettuce, chopped
  6. 1 vine-ripened tomato, sliced into 8 wedges
  7. 1 can black olives (whole and pitted), drained
  8. 1 small green bell pepper, cored, seeded, and sliced into 1/4-inch rings
  9. 1 medium cucumber, sliced into 1/4-inch thick circles
  10. 2 hard-boiled eggs, peeled and quartered lengthwise

Instructions

  1. In a medium bowl, combine sweet relish, mayonnaise, and crabmeat. Set aside.
  2. On a 12-inch chilled platter, combine the 2 types of lettuce in the center of the platter. Arrange tomato wedges around the perimeter of platter. Alternate the olives, bell pepper rings, and cucumber slices between the tomatoes. Arrange the hard boiled eggs around the vegetables. Spoon the crabmeat mixture into the center.

Very tasty! I just tweaked it a bit. Mayo, Fresh Tomato purée, Freshly cooked Bacon diced. And 1/4 cup of finely sliced celery. Other than that everything was the same.

But the salad was still missing something. I couldn’t put my finger on it but it was something flavor-wise.

The mayonaisse is impossible to find so I substituted thousand island dressing and bacos like someone here suggested. It overwhelmed the flavor of the crab. I could have served tuna or steak or tofu and no one would have known the difference. What a waste of money.
