Ingredients
- 1 pound cubed or minced pork stew meat
- 1 (1.25 ounce) package taco seasoning mix
- 1 tablespoon vegetable oil
- 1 cup chunky salsa
- 1 (16 ounce) can chili beans, undrained
- ⅓ cup apricot preserves
- 12 taco shells
- 1 (10 ounce) can sliced ripe olives, for topping
Instructions
- Toss pork meat with taco seasoning mix in a plastic resealable bag until coated.
- Heat oil in a skillet over medium-high heat. Fry seasoned pork in hot oil, stirring occasionally, until pork is no longer pink.
- Stir salsa, beans, and apricot preserves into the skillet with pork. Reduce heat to low; simmer until heated through, about 10 minutes.
- Spoon 1/3 cup pork mixture into each taco shell and top with sliced olives.

I personally love this one, served with pico de gallo, I would not use the traditional taco toppings we use in the USA….but Pico de gallo is perfect for this one as a topper. I’ve made this about 5 times and I love it every time.

Outstanding! I threw everything in the crockpot, except for the shells obviously, and put it on low for six hours. It takes less than five minutes of prep time and dinners ready at the end of the day.?

I cubed a lb of pork shoulder and browned in the fry pan. Then put all ingredients in the crock pot. Useing hot chili beans and jalepeno salsa. The flavors of the apricot and spices were amazing. Had more pork left over so i did it again the next day put all in the fry pan this time. Tasted just as great.

This dish is just incredible. I made a double recipe for 3 people so we would have some for leftovers and it was so good we sat there and ate it all!
My family loves this recipe! I make it at least once a month. We add a fresh cabbage and cilantro slaw on top and serve it with flour tortillas. My husband has a food allergy that makes going out for tex-mex difficult so it is wonderful to be able to make it at home.

OK, so I did not follow this EXACTLY. I really just jumped on the idea of using pork meat with taco seasoning, salsa, and apricot preserves as a base taco filling and it was delicious! I just threw all of those ingredients in a dish, baked it until heated through, and everyone gobbled it up. No leftovers! Super easy, healthy; this will be a staple in our house. Thanks for the idea!
Very good. A real “keeper.” Washed and drained my chili beans and added a squirt of lemon juice. Filled taco shells, topped with some grated cheese, then placed in 300 oven for 7 minutes. Crunchy deliciousness – rave reviews! (I always do the oven thing with tacos. My sister-in-law taught me this little trick many years ago.) I have another recipe that uses concentrated lemonade. May try that in place of the apricot preserves some other time. Thanks for posting this one.
