Ingredients

  1. 10 ears of corn
  2. 2 tablespoons Aleppo pepper flakes
  3. Grated zest of 4 limes
  4. 1 cup grated parmesan cheese (about 2 ounces)
  5. Kosher salt and freshly ground black pepper
  6. Melted butter, for brushing

Instructions

  1. Preheat a grill to medium high. Peel back the corn husks but leave them on (the husks will create a handle for eating); remove the silk.
  2. Combine the Aleppo pepper, lime zest and cheese in a mixing bowl. Season with salt and black pepper.
  3. Place the corn on the grill and cook, turning, until lightly charred, about 10 minutes. Brush with melted butter and sprinkle with the cheese mixture.
