Ingredients

  1. 2 cups corn scraped from cob, milk removed
  2. 2 eggs, beaten
  3. 1/2 cup finely chopped onion or 1 tablespoon chopped chives
  4. 1 teaspoon sugar
  5. 1 teaspoon salt
  6. 2 cups milk or cream
  7. 1 tablespoon butter
  8. 6 saltine crackers, crumbled
  9. Herb or herb mix, to taste, recipe follows
  10. 1 tablespoon dried parsley
  11. 1 tablespoon dried basil
  12. 1 tablespoon dried marjoram
  13. 1 tablespoon dried oregano
  14. 1 tablespoon dried thyme
  15. 1 tablespoon dried summer savory
  16. 1/2 tablespoon dried tarragon
  17. 1/2 tablespoon dried sage

Instructions

  1. Preheat oven to 350 degrees F.
  2. Mix all ingredients together. Pour into greased 1 1/2-quart baking dish and bake for 1 hour.
  3. Mix the herbs together and store in an air-tight jar.

I finally found the corn pudding my mom, Grace Parker, used to make for us as children. It’s a great recipe and easy to make on a busy day. Ask your mom for those recipes while you can.

I tried this recipe out for Thanksgiving this year largely because I was glad to see that you could use milk instead of cream. I added some thyme, italian seasoning, and scallions. It came out great!!

i spilled half of it on the floor and added the eggs halfway through by accident & it still turned out good. very resilient dish. definitely try the bread crumbs/saltines on top.

vey easy, although I thought it would be creamier. I mixed the herb mixture with bread crumbs to make a crunchy topping.
