The grandmother of one of my friends gave me this fantastic corn pone recipe. Once you make it, it will become a go-to meal. It pairs well with barbecue and other Southern-style foods and is juicy and tasty.

Ingredients

  1. 3 cups white cornmeal
  2. 4 cups boiling water
  3. 1 ¼ cups white sugar
  4. 1 teaspoon salt
  5. 2 cups milk
  6. 3 eggs
  7. ½ cup butter, melted

Instructions

  1. Preheat the oven to 375 degrees F (190 degrees C). Butter a 9×13-inch baking pan.
  2. Place cornmeal in a large bowl. Pour in boiling water, stirring until blended. Add sugar and salt; blend using an electric mixer.
  3. Beat milk and eggs together; stir into the cornmeal mixture. Add melted butter and blend well. Pour into the prepared pan.
  4. Bake in the preheated oven until top is slightly browned, about 1 hour.

i’ve never made corn pone before, only had experience with corn bread- but I loved how moist it was! would definitely make it again.
