For a hot day, this salad is refreshing. I enjoy grilling fish or chicken to go with it. It is also delicious with pita chips as a snack.

Ingredients
- 2 English (hothouse) cucumbers, diced
- 1 teaspoon salt
- ½ cup diced red onion
- 1 small red bell pepper, diced
- 2 limes, zested and juiced
- ¼ cup chopped fresh cilantro
- 1 tablespoon white sugar
- ½ teaspoon curry powder
- 4 dashes hot pepper sauce
- 2 avocados – peeled, pitted and diced
Instructions
- Place the cucumber slices into a colander set in the sink, and sprinkle with salt. Set aside and allow to drip.
- In a salad bowl, mix together the red onion, red bell pepper, lime zest and juice, cilantro, sugar, curry powder, and hot pepper sauce until thoroughly combined and the sugar has dissolved. Drain the cucumber slices, and pat them dry with paper towels. Stir the cucumbers into the salad. Gently toss the avocados with the salad and serve.
- If you are not going to serve this immediately do not peel, chop and add the avocado until just before serving. Also, if you are in a real hurry, you can skip draining the cucumbers, but any leftovers you have will get watery.

I used cherry tomatoes instead of red pepper. Good, but the curry powder crowded out most of the rest of the flavors.
I left out the cilantro cause I’m not a fan but and didn’t have hot sauce so added a little wasabi sauce. It was delicious and my husband loved it
This is tasty! Very fresh. Could probably be eaten with chips like a fresh salsa.
Easy fresh salad. I love the mix of avocado and veggies. The curry powder gives it a unique yummy taste. Cut back on the lime juice a bit. Just my preference.

Wonderful, easy salad! I left out the curry intentionally (not a fan), so adjusting to personal preference is simple. I might add tomatoes or feta next time as they seem like they would complement the overall flavor.

The one draw back to this recipe is that it is fairly labor intensive. On the other hand, the results are terrific. Even a guest, who does not like avocado, found this to be very flavorful. I followed the recipe as written.
First time, I didn’t use the red pepper or the red onion as I didn’t have. I also used the small Persian cucumbers (peeled). It was so good, I made it the 2nd time, including all ingredients, same cucumbers, this time we put on top of grilled swordfish, which was an excellent addition to the fish. All the lime juice also kept the avocado from turning brown. This recipe will be made many more times this summer.
Loved the flavors. The only thing I will do differently next time is adding more avocados and cutting the cucumbers smaller. They overpowered the dish a bit.
Very yummy salad! I cut this recipe in half, and my husband and I shared it for lunch. I added double the amount of curry and put in a nice big squirt of Sriracha for the hot sauce. I had to use lemon juice as I didn’t have any lime. I will definitely make this salad again! Thanks!

Very nice in a hot summer day. The curry is an unexpected surprise. I will probably salt the cucumbers with more salt and let them sit longer before rinsing. The dish was a bit soupy by next day. I’ll be making this again.
Good recipe. I added a jalapeno pepper and some diced tomato. It had a little bite that I like in salsa.
