Ingredients
- 1 cup warm water
- 1 cup pre-cooked white cornmeal (such as P.A.N.)
- 1 cup shredded mozzarella cheese
- 1 tablespoon butter
- ½ teaspoon salt, or to taste
- cooking spray
Instructions
- Mix water, cornmeal, mozzarella cheese, butter, and salt together in a large bowl. Knead until well combined and a soft dough forms. Form dough into balls the size of a medium orange. Place each ball between two sheets of plastic wrap and flatten with a rolling pin to the desired thickness.
- Leaving plastic wrap in place, press the top edge of a cereal bowl or drinking glass into the surface of the dough to cut circles. Remove the plastic wrap and remove any excess dough scraps.
- Spray a griddle with cooking spray and set over medium-high heat. Working in batches, cook arepas on the hot griddle until golden brown, about 5 minutes per side. Serve immediately.
- If the dough is too dry, add a little bit more water. If it’s too moist, add more cornmeal.

Another reviewer mentioned using more butter. I cooked mine in a cast iron skillet and used butter instead of oil, to make about 1/8 inch of butter in the pan heat the butter until it starts to sizzle and bubble. They don’t get as brown and crispy as oil but they do taste more buttery.
Amazing!!! I definitely recommend and these astonishing arepas they taste like the best grilled cheese I’ve ever had! This is a great snack/dinner!!!
This recipe is so good and so easy! My daughter first found it as part of a school project, but we have since made it just for our family because it is easy and delicious! I will say that the arepas are much better fresh. They don’t keep their taste as well after a few days in the fridge, but that is rarely a problem since we usually devour them all on the first day!
I would add more butter because I’ve tasted arepas cooked by a Colombian woman and they tasted buttery, but it’s personal preference
These are delicious. We ate ours with salsa and queso fresco and it was amazing. I’d suggest cooking with actual oil, rather than cooking spray. It crisps up the edges and adds a nuance to the flavors. (I made half with cooking spray, half with olive oil.)
