Collard Greens with Smoked Turkey Wings

Ingredients

  1. 5 pounds collard greens, cleaned and stems removed
  2. 2 white onions, diced
  3. 6 cloves garlic, minced
  4. 1 1/2 tablespoons vegetable oil
  5. 1 teaspoon crushed red pepper
  6. 1 smoked turkey wing
  7. 2 cups chicken stock
  8. Salt and pepper
  9. 1/4 cup cider vinegar

Instructions

  1. Saute onions and garlic in oil until soft and add turkey wing. Add chicken stock and chopped or torn greens. As greens cook down, add water as needed and season with salt, pepper and crushed red pepper. Cook until tender, about 45 minutes. Serve with vinegar on the side.

I was actually going to use another “collard greens” recipe but could not find it in my saved items when I was ready to cook them. By the time I realized that I couldn’t find the recipe I had already cooked the smoked turkey. ( I used a turkey drum stick as I do not like to sort through turkey neck bones.) I cooked the greens then added the cooked smoked turkey toward the end. I mixed the apple cider vinegar in toward the end of cooking the collards. My tweeked recipe was truly the bomb.com!!!

I added garlic with the onions and I had a smoked turkey leg that I used instead of a wing….Yummy

My dad always had a big vegetable garden when I was growing up and collards was a favorite even when I was young.  He fixed it simply without complex spices.  I like to find recipes that remind me of the days of self grown vegetables.  (It’s impossible for me to grow anything in the rocks/soil in my yard!)   This was a fabulous recipe using a humble vegetable.  The addition of the smoked turkey wing gave it a whole new complexity.  Sooo good with a pepper vinegar sauce.  I know my dad would have loved it too.

Made this for New Years day with blackeyed peas. Yummy !! I cooked the wings first and when they were almost tender I added the collard greens. Didn’t have a lot and I didn’t want them to cook away.
