Collard and Red Cabbage Slaw

If you want a change up from regular ‘ole slaw, then this is the recipe for you. I love using collard greens whenever I can and this slaw is the perfect vehicle for it. You can serve it right away or you know my motto—the longer it sits, the better it gets.

Ingredients

  1. 1/2 cup mayonnaise
  2. 3 tablespoons Dijon mustard
  3. 1 tablespoon honey
  4. 1 tablespoon white vinegar
  5. 2 teaspoons Miss Brown’s House Seasoning, recipe follows
  6. 1 teaspoon celery seeds
  7. 2 cloves garlic, minced
  8. Kosher salt and freshly ground black pepper
  9. 6 cups shredded collard greens
  10. 4 cups shredded red cabbage
  11. 1/2 red onion, diced
  12. 1 teaspoon garlic powder
  13. 1 teaspoon onion powder
  14. 1 teaspoon sweet paprika
  15. 1 teaspoon kosher salt
  16. 1 teaspoon freshly ground black pepper

Instructions

  1. For the dressing: Mix together the mayonnaise, mustard, honey, vinegar, Miss Brown’s House Seasoning, celery seeds and garlic in a small bowl. Season with salt and pepper.
  2. For the slaw: Combine the collards, cabbage and onion in a large serving bowl. Add the dressing and toss to coat well. Serve immediately.
  3. Stir together the garlic and onion powders, paprika, salt and pepper in a small bowl. Store in an airtight container.

Substituted sliced apples for raw red onions as we’re not fans of raw onions…just adjusted onion powder to taste. Very good!

Delicious.  Wasn’t sure my husband would like it, but he loved it!  A nice change from the usual slaw.
