Cola Barbecue Sauce

Ingredients

  1. 4 cloves garlic, peeled
  2. 1/4 teaspoon kosher salt, plus a generous pinch for the garlic
  3. 3 cups cola
  4. 1 1/2 cups ketchup
  5. 1/4 cup cider vinegar
  6. 2 tablespoons Worcestershire sauce
  7. 1 slightly heaping tablespoon chili powder
  8. 1 teaspoon freshly ground black pepper, plus additional for seasoning
  9. 1/2 teaspoon hot sauce, plus additional for seasoning
  10. 1/4 teaspoon ground allspice
  11. 1 1/2 tablespoons freshly squeezed lime juice

Instructions

  1. Smash the garlic cloves, sprinkle with a generous pinch of salt, and, with the flat side of a large knife, mash and smear mixture to a coarse paste. 
  2. Stir garlic paste, the 1/4 teaspoon salt, cola, ketchup, vinegar, Worcestershire, chili powder, 1 teaspoon black pepper, 1/2 teaspoon hot sauce, and allspice together in a small saucepan. Bring to a boil, reduce heat, and simmer until thickened, about 45 minutes. Allow to cool slightly, stir in the lime juice, and season with black pepper and hot sauce, to taste. 
  3. Know-How: Barbecue sauces are all about balance: a sweet note offset by sour with a jolt of spice, all of which flourish in a cloud of smoke. There are lots of ways to work this magic-thick, thin, and in-between. Concocting a signature sauce is compulsory in some barbecue circles. Start with this basic riff and play with variations to suit your style.

Great sauce recipe! Will definitely use again. I thickened part of the sauce with cornstarch and added honey which thrilled my taste for sweet BBQ sauce. Makes a lot and makes great crock pot chicken.

I have made this sauce 5+ times. Every time it turns out delicious! I agree with the previous writer, I reduce it down for far longer than the time it says on the recipe. I let it sit for hours if you have time. It turns out think and amazing. Highly recommended.

This has a 5 star taste. The ONLY thing I can knock this sauce for is that it’s a little thin. I’m thinking either I didn’t cook it (reduce it long enough or something. But I LOVE the taste. My husband does too & he’s hard to impress.

It’s easy to make. I used Dr. Pepper instead of regular cola. YUMMY!

Nasty! This was horrible. I didn’t like anything about it. It even smelled bad while it was cooking. If you need a goog BBQ sauce, try the Neely’s BBQ sauce. That is great!

The taste was good but the sauce was not thick enough. I added some bottle barbeque sauce to make it thick.

Sorry for the slang, but this sauce is the best sauce you could ever ask for. I’m through with bottle sauces after this. I just dont have words to explain how good this sauce is. I used it on pork ribs which I used Mike Mills “Magic Dust” the 2 together makes your tongue keep wanting more. It just wasn’t enough.

Sauce was great. Not as thick as I would like, but probably needed to reduce more. It was delicious and I just realized I forgot to add the lime.
