Ingredients

  1. 2 eggs, beaten
  2. 1 cup white sugar
  3. 1 cup chopped dates
  4. 1 teaspoon vanilla extract
  5. 1 tablespoon butter
  6. 3 cups crispy rice cereal
  7. 1 cup flaked coconut

Instructions

  1. In a medium saucepan over medium heat, combine the eggs sugar and dates. Bring to a boil, stirring occasionally, and boil for 5 minutes. Remove from heat and stir in the butter and vanilla. Mix in crispy rice cereal. Butter hands and roll the mixture into walnut sized balls. Roll the balls in coconut. Serve.

We love to make these during Christmas time. They are very tasty and easy to make. I use medjool dates because they are more moist and I like frozen coconut instead of dry. They freeze well.

These are delicious! I live extremely far away from any markets so I had to adjust the recipe to work with what I already had. I swapped out the 3c of rice krispys for 1c of oats and used agave rather than sugar. A little messy but totally worth it!!!

I used Mediterranean dates and had to pit them but it also chopped them up…I also used a mix of 3 different people’s recipes and they turned out great! Just can’t recall how?? The best tip was using a pan instead of rolling balls!

These are a delicious, light dessert that present beautifully! I chopped the dates in a food processor, which is way easier than chopping them by hand. As suggested by other reviewers, I pressed the mixture into a coconut-covered pan and then sprinkled coconut on top. I also omitted the egg and replaced the butter with a margarine/coconut blend, as suggested by another reviewer. I don’t think those little changes had a affect on the taste. Every guest at dinner took a few home. Thanks for this delicious and simple recipe!

The hardest part is rolling the cookies. Use lots of coconut and drop by teaspoonful. Cover with coconut, then use hands to roll. Reviews were very helpful. These treasures don’t last. Favorite since I was a kid. (60’s)

I was looking through my moms old recipes, and found this exact recipe she made when I was little! I was so excited to find it. I made these last year during the holidays, and I plan on making them every year from here on out! Everyone loves them, and I think they’re pretty easy to make considering you don’t have to bake anything. Give them a try, you won’t be disappointed!

these are not bad but would rather go egg free as there is no need for the egg if you add butter. Proper date balls as they are knows don’t have rice krispys in them this is the proper recipe below. Plain and simple! I know we all have a recipe that we prefer and mine is, one pkt of coconut biscuits ground up, half a cup butter melted, about half a cup desiccated coconut and two slabs of pitted dates. Add to blender and grind up. When done make into balls and roll in coconut and put in fridge. If too dry just add more butter. After a few hrs in the fridge they are nice and hard. there is no way that you can go wrong, Just wing it

Addicting! I could only find already sweetened dates in the baking aisle. It was a 6 oz (3/4) package. I skipped the sugar therefore. I also used unsweetened coconut. I added 1/2 c toasted, chopped pecans and 2 1/2 c Krispies. I made these with a group of kids so it worked great to spread them into an 8 x 8 instead of balls. The kids loved them!

I cooked mine i the microwave stirring after each minute on half power. Also, wet your hands when making the balls and its much easier. Made these for years
