Clean Green Vinaigrette

This vinaigrette uses fresh dill and chives and is a simple way to add some greens to your meals.

Ingredients

  1. ¼ cup olive oil
  2. ¼ cup white wine vinegar
  3. 1 tablespoon chopped fresh dill
  4. 1 tablespoon chopped fresh chives
  5. 2 teaspoons minced shallot
  6. 2 teaspoons white sugar
  7. ¼ teaspoon salt
  8. ¼ teaspoon ground black pepper

Instructions

  1. Place oil, vinegar, dill, chives, shallot, sugar, salt, and pepper in a screw-top jar. Cover and shake well to combine.
  2. You can vary vinaigrettes by following a simple formula: 1/4 cup oil (such as olive, avocado, or sesame), 1/4 cup something sour (white wine vinegar, lime juice, or rice vinegar), 1 tablespoon something herby (dill, chives, green onion, or cilantro), 2 teaspoons something zippy (shallot, ginger, or jalapeno), 2 teaspoons something sweet (sugar, maple syrup, or agave syrup), 1/4 teaspoon salt, and 1/4 teaspoon ground black pepper.
