Classic Gazpacho

Ingredients

  1. 3/4 pound red ripe tomatoes (2 to 3)
  2. 2/3 cup chopped onions
  3. 1 large clove garlic
  4. 1 cucumber, peeled and seeded (about 6 ounces)
  5. 1 red bell pepper, chopped
  6. 4 ounces crustless French bread (about 3 cups coarsely chopped)
  7. 2 tablespoons Spanish OR very fruity olive oil
  8. 1/4 cup sherry vinegar
  9. Garnish: About 6 finely-chopped Tablespoons each green bell pepper, red bell pepper, onion, cucumber, hard-boiled egg and olives; 3/4 cup small croutons

Instructions

  1. In a food processor or blender puree tomatoes, onions, garlic, cucumber, red pepper, bread, olive oil and vinegar until very smooth, 2 minutes or more. Refrigerate several hours.
  2. Before serving, season with salt and pepper and strain through a sieve if desired. Thin with ice water if needed. Divide among 6 soup bowls and offer choice of garnishes.

Hi … I like this recipe.  However, I am on a Keto program and must leave out the bread.  Would anyone like to suggest a substitute?  My first thought is steamed cauliflower into the blender in place of the bread.  Any better ideas?

It is in the high 90s here and will be all week.  I needed something cool and simple to get through the next few days.  This super simple recipe comes together in about 15 minutes and is perfect.  My only change was that I used homemade garlic croutons that I had on hand rather than the plain French bread called for in the recipe.  I blended it for three minutes so it is smooth but did not strain it, because I like the texture it has now.  I can eat it as is or maybe with a bit of grilled shrimp or chicken.  Muy delicioso y tan sencillo.

My first experience with Food Network was watching David’s show Taste when it was on the air.  It is still my favorite show ever on the network and I wish they would bring it back.
