Ingredients

  1. 3 tablespoons olive oil
  2. 1 tablespoon orange juice
  3. 2 teaspoons honey
  4. 1 1/2 teaspoons champagne vinegar
  5. 1 teaspoon Dijon mustard
  6. 6 to 7 oranges, preferably a mix of regular and blood oranges (or just regular oranges)
  7. 4 limes
  8. 12 radishes, sliced
  9. Handful fresh mint leaves

Instructions

  1. For the dressing: Add the oil, orange juice, honey, vinegar and mustard to a mason jar and shake to mix.
  2. For the citrus salad: Carefully cut off the peel of the oranges and limes to remove the pith, then slice.
  3. Layer the orange and lime slices on a plate and sprinkle over the radishes. Drizzle with some of the dressing and top with the mint leaves.

This is a wonderful salad for pot lucks. It’s pretty and very refreshing. I used naval and cara cara oranges. Making it again for tomorrow!!

I had made this before but this time I used blood orange, CaraCara orange, lemon, lime, and Melogold grapefruit. I sprinkled the citrus with a generous portion of kosher salt then poured on the dressing. I like salt on my citrus. Mighty tasty and colorful for a winter salad.
