Ingredients
- 1 tablespoon olive oil
- ½ pound smoked sausage (such as Conecuh©), cut into 1/4-inch thick slices
- 1 large onion, chopped
- 1 cup chopped green bell pepper
- 1 cup chopped celery
- salt to taste
- ½ teaspoon Cajun seasoning, or to taste
- 1 cup uncooked white rice
- 1 (14.5 ounce) can diced tomatoes with juice
- 1 tablespoon minced garlic
- 2 cups chicken broth
- 3 bay leaves
- ¼ teaspoon dried thyme leaves
- 1 pound peeled and deveined medium shrimp (30-40 per pound)
Instructions
- Heat the olive oil in a Dutch oven or large pot over medium heat. Stir in the sausage, and cook for 2 minutes. Add the onion, bell pepper, and celery; season with salt and Cajun seasoning. Cook and stir until the vegetables are soft, 6 to 8 minutes. Stir in the rice until evenly coated in the vegetable mixture, then pour in the tomatoes with juice, garlic, chicken broth, bay leaves, and thyme leaves. Bring to a simmer over medium-high heat, then reduce heat to medium-low, cover, and simmer 20 minutes.
- After 20 minutes, stir in the shrimp, and cook 10 minutes uncovered until the shrimp turn pink and are no longer translucent in the center. Remove the pot from the heat, and let stand 5 minutes. Discard the bay leaves before serving.

It was great my first time making it and it was such an easy recipe. I made some changes to the spice added a little bit of ground mustard and a little chili powder. I used two cups of minute rice and 2 cups of chicken broth as well.
This is so good! I have made it several times, I do usually double everything because we are a large family and everyone loves it. We never have leftovers of it!
We used a packet of Seeds of Change Brown Rice and Quinoa in place of rice and chicken broth, and we used chicken sausage. This was a huge success with our guests and so easy!
Made it in dutch oven in a campfire. Easy to prepare and chop the ingredients before the trip. Once in the pot just wait and serve.

I made this for the second time, I used Portuguese sausage in the recipe. The family really liked this recipe and tonight was the second time I made it.
I’m not even kidding when I say this was the bomb. I bought smoked sausage from the hyvee deli which I think helped. I used raw shrimp. Doubled the garlic and Cajun seasoning. Added about 1/2 c extra chicken broth because I used jasmine rice. Used 2 cups green pepper because I didn’t have celery. And added very small can of tomato sauce. My 4 year old licked her plate.
Great recipe! Changes were small, I go with a brown rice for the extra fiber. I also like a red pepper, instead of green; a slightly difference taste and adds to the color.
This recipe was really easy and delicious. Probably the best jambalaya I’ve ever had, and certainly the best I’ve ever made. I doubled the sausage and shrimp, so I added another can of tomatoes, which made it just “saucy” enough to my taste. I also added a red bell pepper along with the green bell pepper. You really can customize this to your liking and to what you have. Next time I will add okra.
This was delicious! The only thing I did differently – a teaspoon of Cajun seasoning and a few shakes of Tabasco. My husband likes his food spicy. I’ve tried other jambalaya recipes and this was by far the best!

Excellent! Went exactly by the recipe. If you wanted to make it even more convenient you could buy a bag of seasoning blend ?? My shrimp turned out wonderfully. I highly recommend this recipe.
I followed the recipe to the letter and roasted the rice prior to stirring it in. I also used parboiled rice easy and very filling
I made this tonight and it is delicious. The only adjustment I made was adding more Creole seasoning. I used a spicy Portuguese sausage . This recipe is a keeper!
I followed recipe for most part, I doubled the thyme & cajun seasoning. added 1/8 teaspoon of cayenne. the part when you mix the rice and veggies I sauteed the rice for at least 2 minutes until they turned white. add at least an extra 1/4 tablespoon of garlic. I liked this. first time making and was not disappointed. Have had a restaurants not only this was easy but rivaled and even tasted better than most I had.
