Ingredients

  1. 2 teaspoons canola oil
  2. 1 pound boneless, skinless chicken breasts, cut into 1-inch strips
  3. 1 ounce honey-roasted peanuts
  4. 4 cloves garlic, minced
  5. 2 teaspoons minced fresh ginger
  6. ¼ cup sliced green onions
  7. 1 tablespoon low-sodium soy sauce
  8. 2 teaspoons rice vinegar
  9. 1 teaspoon toasted sesame oil
  10. 1 cup fresh cilantro, chopped
  11. 4 cups shredded napa cabbage

Instructions

  1. Heat canola oil in a heavy 10-inch skillet over high heat. Add chicken; cook and stir for 2 minutes. Stir in peanuts, garlic, and ginger. Cook until chicken is no longer pink, about 3 minutes.
  2. Add green onions, soy sauce, rice vinegar, and sesame oil. Cook and stir for 2 minutes more. Remove from heat. Stir in cilantro.
  3. Spoon chicken stir-fry over cabbage to serve.
  4. Feel free to substitute 2 cups hot cooked brown rice for the napa cabbage if you like.
