Chuck’s Favorite Shrimp

Ingredients

  1. 16 jumbo shrimp, tails on, peeled, deveined and butterflied
  2. 2 jalapenos, seeded and cut into thin strips
  3. 8 ounces thin bacon slices, cut in half
  4. 1 stick (8 tablespoons) salted butter
  5. 1 clove garlic, pressed
  6. Kosher salt and freshly ground black pepper
  7. Hot sauce, as needed

Instructions

  1. Preheat the oven to 400 degrees F.
  2. Spread out 1 shrimp and place 2 or 3 jalapeno strips in the center. Bring up the sides of the shrimp and wrap half a slice of bacon around it somewhat tightly. Secure with a toothpick (soaked in water) and place on a broiler drip pan. Repeat with the remaining shrimp, jalapenos and bacon.
  3. Melt the butter in a small pan and combine with the garlic and some salt, pepper and hot sauce. Brush the mixture all over the shrimp. Roast the shrimp until the bacon is cooked and crisp, 25 to 30 minutes.

I made these per the recipe, and baked on a silicone mat.  Perfect.  I served with my husband’s blue cheese dressing.  Although they are rich, the flavor was superb.  The recipe is definitely going into my Christmas cookbook.

My husband’s & my favorite from Pappasito’s restaurant! Tried to make at home, but the bacon wasn’t right. Didn’t even think of partially cooking the bacon a bit before wrapping it around the prepared shrimp. Think I’ll try half a strip of bacon next time, wrapping one full time instead of wrapping one whole strip around and around it several times. You don’t want it too crispy or too rubbery!

Cooked this recipe tonight for my husband. He loved it!!! So easy, very few ingredients, and cost efficient. I didn’t use hot sauce or old bay though. (Used a deferent spice on hand instead.) Overall a great one pan meal!

I’ve made these as an appetizer a few times now, everyone loves them. I also have done with adding cream cheese and they were even better. I use toothpicks to stab through shrimp to hold bacon. Amazing!

Followed rules as instructed. But there must be a trick to wrapping bacon around shrimp! Mine were not pretty. For me not enough flavor or spice. Shrimp became over cooked waiting for bacon to crisp.

AMAZING.  Cut back on the butter you won’t need that much, and watch the time, my shrimp were done in 20 minutes but oh boy are these good.  We had them with fettuccine alfredo and crisp snow peas.

I’m sorry, Ree, but I did not enjoy these at all.  Followed the recipe exactly, and I agree with CathyJo12- the bacon overwhelms.  I don’t even think a sauce would help!
