Christina’s Favorite Buffalo Wings

Ingredients

  1. 1 (12-ounce) can beer
  2. 3 tablespoons hot sauce
  3. 2 pounds chicken wings
  4. Vegetable oil or shortening, for frying
  5. 1 cup all-purpose flour
  6. 1 1/2 teaspoons salt
  7. 1 teaspoon freshly ground black pepper
  8. 1 teaspoon ground cinnamon
  9. 1 teaspoon cayenne
  10. 1/2 cup unsalted butter, melted
  11. 5 tablespoons hot sauce
  12. 1 teaspoon dark brown sugar
  13. 1 cup blue cheese, crumbled
  14. 3/4 cup mayonnaise
  15. 1/2 cup sour cream
  16. 2 tablespoons minced onion
  17. 1 tablespoon white wine vinegar
  18. Salt and freshly ground black pepper
  19. Serving suggestion: carrot and celery sticks

Instructions

  1. To make the wings: In a large bowl, whisk together the beer and hot sauce. Add chicken and turn to coat. Cover and refrigerate at least 1 hour and up to 3 hours.
  2. To make the sauce: Combine all ingredients and set aside.
  3. To make the dip: Combine all ingredients, place in a serving bowl and refrigerate until needed.
  4. Add oil or shortening to a large pot or deep-fat fryer to make a depth of 1-inch. Heat to 375 degrees F.
  5. Meanwhile, in a medium-size bowl, combine the flour, salt, pepper, cinnamon, and cayenne. Strain the chicken wings and pat them dry. Lightly dust in the flour mixture. Fry the wings, in batches as necessary, turning every 3 minutes until crisp and brown, about 12 minutes (adjust the heat as needed to maintain temperature). Drain wings on paper towels and toss with butter sauce.
  6. Serve immediately with blue cheese dip and carrot and celery sticks.

Very tasty wings, but a little disappointing because they were not at all hot. The blue cheese dipping sauce and the hot sauce that the wings are tossed in after cooking are huge winners. We’ll definitely use those parts of the recipe again.

I made these for a party and everyone LOVED them! I didn’t even make the blue cheese dip with them and every last wing was gone by the end of the night. The blue cheese dip will spoil you.. I never eat bottled blue cheese dressing now that I know a recipe that is the best blue cheese dressing hands down!
