Chopped Salad

This salad is like one big antipasto. I love the combination of the garlicky, salty salami and spicy pepperoncini, cooled by the provolone cheese and paired with the crisp iceberg lettuce. I make the vinaigrette heavy on the vinegar–equal parts vinegar and oil–because the acidity helps balance the strong flavors of the salad.

Ingredients

  1. 1 head of iceberg lettuce, chopped
  2. 1/2 English cucumber, chopped
  3. 1 red bell pepper, chopped
  4. One 15.5-ounce can chickpeas, drained, rinsed
  5. 1 cup chopped salami
  6. 1 cup chopped provolone cheese
  7. One 6-ounce jar marinated artichoke hearts, drained and chopped
  8. 1/2 medium red onion, finely minced
  9. 1 cup cherry tomatoes, halved
  10. 8 whole pepperoncini
  11. 1/4 cup extra virgin olive oil
  12. 1/4 cup red wine vinegar
  13. 1 teaspoon minced fresh rosemary
  14. 1 garlic clove, minced
  15. 1 teaspoon kosher salt
  16. 1/2 teaspoon freshly ground black pepper

Instructions

  1. Mix all the salad ingredients in a large bowl.
  2. Combine the vinaigrette ingredients in a small glass jar with a tight-fitting lid and shake well.
  3. Toss the salad with the vinaigrette and serve immediately.

I made this salad yesterday for a Labor Day BBQ and all loved it. I’m vegetarian, so I subbed veggie salami. Also, I used Basil from my basil plant instead of rosemary. I will make this salad over and over.

I love this salad – I’ve never ever altered the recipe (why is that people change a recipe then review the original as their altered recipe??   Drives me crazy!).   I’ve made it many times over the years and it is always delicious.  One little timesaver is that I order the salami and provolone thickly sliced from the deli ahead of time and just chop it up when I get home.    It’s a wonderful meal when you’re looking for something light and tasty and savory!

Wondering if lettuce needs to be washed? Katie Lee just cut it up and put it in the bowl. Do you only wash the outside? Have I been wasting time washing chopped lettuce?!?!?!

Sorry, this is not worthy of a “recipe”. We make this all the time, but call it garbage salad. We put in lettuce of whatever kinds we have, and veggies, meats, eggs, cheese, etc… whatever we have. Watched this expecting something amazing, sorry… ☹️
