Chocolate Pie

Ingredients

  1. 24 chocolate sandwich cookies
  2. 5 tablespoons salted butter, melted
  3. 1 1/2 cups sugar
  4. 1/4 cup cornstarch
  5. 1/4 teaspoon kosher salt
  6. 3 cups whole milk
  7. 4 large egg yolks
  8. 6 1/2 ounces bittersweet chocolate, chopped finely
  9. 2 tablespoons salted butter
  10. 2 teaspoons vanilla extract
  11. Whipped cream, for serving

Instructions

  1. For the crust: Preheat the oven to 350 degrees F.
  2. Pulse the cookies in a food processor until finely chopped. With the processor running, add the butter. Press the crumbs into the bottoms of four 4 1/4-inch disposable aluminum pie pans. Bake until set, about 5 minutes. Let cool.
  3. For the filling: Whisk together the sugar, cornstarch and salt in a medium saucepan. Whisk in the milk and egg yolks. Stir over medium heat until the mixture just barely comes to a boil and becomes thick, 6 to 8 minutes. The second it starts to bubble and thicken (it should be thick like pudding), remove it from the heat. Add the chocolate, butter and vanilla, then stir until everything is beautifully combined. Pour the pudding into the pie crusts and place in the fridge, uncovered, to chill for 4 hours. Serve topped with whipped cream.

Used dark chocolate oreos for the crust and bittersweet chocolate in the filling. Delicious!!!

I love this recipe! My granddaughters and I make when they come for a visit. I’ve made it as written but felt it was a little to rich. We substitute a regular pie shell for the chocolate cookie shell. I use semi sweet chocolate. Top with whip cream and shaved milk chocolate. Yummy!

Loved the texture.  I prefer bittersweet chocolate over semisweet or milk chocolate, however, I would like a mix of bittersweet and semi.  I also thought is was too sweet.

I “ALWAYS” do a double batch of just the filling and put it in 16oz canning jars as my serving dish (use 1/3 cup corn starch and double everything else).  I usually share with the neighbors and they love it!!  When I’m in need of a chocolate fix, this is what I make and get the biggest spoon I can find.  And, with the unused egg whites, I sometimes make a white cake to go with the pudding and then make a trifle in the jars.  I’ve made this so many times, I can nearly recite the recipe from memory.  Huggums and Squeezums for sharing with us!!!

5 Star Chocolate pie.  The recipe was simple and the step by step was perfect.  

My husband was leaving on a trip and I made him this pie to take with him.  Why a pie you say?  Because I wanted him to be able to share it with his work friends.  I also made mini pies for my neighbor.  It was delicious.

For those of you who can’t find chocolate cookie wafers, you can use chocolate graham crackers for the crust as well.  It came out so tasty with the graham crackers I will always use them when I can’t find the chocolate cookie wafers.

OMG! ‘‘This was a very simple recipe. I even thought I would mess it up. I just finished and the richness of the pie filling is to die for. I couldn’t find the chocolate cookies so I used Chocolate graham crackers! It was still doable. I can’t wait to surprise my husband with his favorite desert.
