I have worked in a child abuse prevention center for 15 years and have served 75 children running the kitchen by myself-shopping, ordering, menu planning, cooking dishes, etc. Having this freedom has allowed me to create yummy and unique meals for kids of all ages. I have been making these delicious cookie bars for 20 years for work and my family…..at work the recipe is quadrupled but this is the home version. It has come by many names but one child did refer to them as “Chocolate covered hash browns” and that name stuck at the center.

Ingredients
- 4 cups oatmeal
- 1 cup brown sugar
- 2/3 cup melted butter, plus more for greasing pan
- 2 teaspoons vanilla
- 1/2 cup corn syrup
- 1 (12-ounce) bag chocolate chips
- 2/3 cup chunky peanut butter
Instructions
- Preheat oven to 375 degrees F.
- Butter a 9 by 13 inch pan. In a large bowl, mix the oatmeal, brown sugar, butter, vanilla and corn syrup. Spread the mixture into the prepared pan and bake 15 minutes. Cool for 10 minutes. Cut into bars.
- For the Frosting: Combine chocolate chips and peanut butter in a double boiler and melt. Mix well. Spread on baked and cooled cookie bars. Refrigerate until frosting hardens.

I used half quick oats and half old fashioned oats, made for a very nice texture. Also sub-ed honey for corn syurp (that’s all I had on hand) and added one egg. Baked for 20 min and the were perfect. I only iced half of the finished bars. Don’t skip cutting them while warm, they firm up quite a bit when cool and would be much harder to cut. Next time I think I’ll skip the topping and add dried fruit and nuts for a yummy, healthy, granola bar.
Do I use regular, old-fashioned oatmeal or quick oatmeal? Does it matter?
I entered the rating of 3 because I haven’t made the recipe yet, but I was not allowed to post this question without putting up a rating. Perhaps this should be changed to allow for questions without ratings. After I make them I will be able to make a more accurate rating.
This recipe lacked many details, making it difficult to make the recipe properly. When it says to cook for 15 minutes, it does not say what you should be looking for. After cooking mine for 15 minutes, the bars completely fell apart, and I ended up cooking them for another 15 minutes.
As for the frosting, I had about 3/4 left after frosting the bars.

These are quick and easy, but I can’t just get them out of the pan very easy!! I’ve made them twice, and really had to work at getting them out. I will keep trying it until I get it right, because they are so easy and delish.

Everything a “kid” would want and so easy to make!! Perfect solution to “What’s for dessert?”!
Great recipe, fast, easy, delicious and kid friendly. Mine stuck because I didn’t butter the pan, so don’t skip that step. Yummy!
