Chocolate Mint Cake Mix Cookies

The simplest cookie recipe ever is this one! You can experiment with the components. We eat these before dinner since I make them for Christmas! If you tell them they’re made from cake mix, nobody will believe you!

Ingredients

  1. 1 (15.25 ounce) package dark chocolate fudge cake mix
  2. ½ cup vegetable oil
  3. 2 large eggs
  4. ½ (10 ounce) package creme de menthe baking chips (such as Andes®)
  5. ½ (10 ounce) bag white chocolate chips

Instructions

  1. Combine cake mix, oil, and eggs in a mixing bowl or the bowl of an electric stand mixer and mix well. Stir in creme de menthe baking chips and white chocolate chips.
  2. Chill dough for 20 to 30 minutes.
  3. Form dough into 1- to 2-inch balls and place 2 inches apart on cookie sheets.
  4. Bake in the preheated oven until edges are set, 8 to 9 minutes.
  5. Dough will seem very oily, but don’t panic!
