What about sweet pierogi, those delectable Polish dumplings? You’ve definitely heard of the savory variety. This unusual and tasty after-dinner delicacy is called “babcine pierogi z jagodami” and it is a pierogi stuffed with blueberries. The traditional Polish technique to serve pierogi is to top them with soured cream, pour them with melted butter, and then top everything off with more sugar and blueberries.

Ingredients

  1. ½ cup white sugar
  2. 3 tablespoons unsweetened cocoa powder
  3. ¼ cup cornstarch
  4. ⅛ teaspoon salt
  5. 2 ¾ cups milk
  6. 2 tablespoons butter, room temperature
  7. 1 teaspoon vanilla extract

Instructions

  1. Gather all ingredients.

  3. Stir together sugar, cocoa, cornstarch, and salt in a saucepan. Place over medium heat, and stir in milk.

  5. Bring to a boil, and cook, stirring constantly, until the mixture thickens enough to coat the back of a metal spoon.

  7. Remove from heat, and stir in butter and vanilla.

  9. Let cool briefly, and serve warm, or chill in the refrigerator until serving.

I prefer using eggs/egg yolk to replace most of the cornstarch but I was out of eggs so gave this a try. It’s as good a pudding as you’ll find using only cornstarch. If your pudding is too thin, you didn’t cook it long enough. It will thicken, I promise. I like lots of choc flavor so added a scant 1/2 quality semi-sweet choc pieces.

WOW! FIRST TIME EVER making homemade pudding and I followed the recipe (almost) exactly. Like others I used brown sugar instead of white , 4 HEAPING tbsp of cocoa powder AND instead of butter added 1/4 cup of GOOD dark chocolate chips, and it came out AMAZING!! Thank you sooo much. Here (in the UK) I was spending £6.50 for ONE BOX of Jello instant pudding (about $7.25 US), NO MORE, WAYYY cheaper and 10 times BETTER. I am one happy American. 🙂

My mom found this recipe many years ago on a box of cornstarch. Not overly chocolate, just right. Very creamy. The only thing that is different is she used 2/3 c sugar. Other than that I highly recommend this pudding!!

I just made this recipe and I doubled it. Turned out great! I use whole milk in all my cooking which I think makes a world of difference! I also used Splenda as I’m diabetic. Great recipe and a keeper for me!

I love this recipe and have made it several times. The only change I make is to reduce by sugar (for diabetic reason) by half and make up the other half with xylitol sweetener (brand I use is called Ideal). It doesn’t change the flavor or texture of the pudding and makes it more diabetic friendly. My mother has a sensitive tongue for “artificial” flavors and she can’t tell I’ve replaced some of the sugar. Just keep it away from pets if you use any xylitol in any recipe. It isn’t pet safe.

This was ok but probably not something I will make again. I did make it as written, but I am not a fan of the texture. It didn’t set up as firmly as I prefer, and I would have liked a richer chocolate flavor as well. Call me old fashioned, but nothing beats an egg custard (cream pudding). Mmm.

It’s good, the best homemade pudding I’ve made (out of admittedly few puddings). Besides heaping the tablespoons of cocoa powder, I followed the recipe. I used 2% milk. The pudding looks like the picture(s). There was a foamy layer over the mixture after I added the milk but that may be due to over-whisking. I removed with a sieve. 8/16/22 Made with whole milk. Tastes like a more viscous hot cocoa. Tasty
