Level: Easy
Total: 1 hr 35 min
Active: 35 min
Yield: 3 to 4 dozen balls

Ingredients

  1. 2/3 cup (1 1/3 sticks) butter, room temperature
  2. 3/4 cup granulated sugar
  3. 1/4 cup dark brown sugar, packed
  4. 1/4 cup applesauce
  5. 1 teaspoon vanilla extract
  6. 1 3/4 cups all-purpose flour
  7. 1/2 teaspoon baking soda
  8. 1/2 teaspoon salt
  9. 1 cup mini semisweet chocolate chips
  10. 12 ounces dark chocolate wafers or semisweet chocolate chips
  11. 6 blocks chocolate-almond bark, such as CandyQuik

Instructions

  1. For the cookie dough balls: In an electric mixer, beat the butter, granulated sugar, brown sugar, applesauce and vanilla together until smooth. Sift the flour, baking soda and salt together, and with the mixer running, slowly add to the butter mixture. Mix in the chocolate chips. Scoop out the batter using a mini ice cream scoop and roll it into balls. Place the dough balls about an inch apart on a baking sheet lined with wax paper and transfer them to the freezer for 30 minutes to let the dough set up.
  2. For the dipping chocolate: While the dough is chilling, melt the chocolate wafers and chocolate-almond bark together in a heavy-bottomed saucepan over low heat, stirring constantly. Remove the chilled dough balls from the freezer. Using two spoons, dip the balls one at a time in the melted chocolate, rolling them to coat fully. Returned the dough balls to the wax paper-lined baking sheet and refrigerate until set, about 30 minutes. Store in the fridge for up to 2 weeks.

I made these today, December 1, 2022 and I am impressed~! However, I found that in order to make the balls the dough needs to be in the fridge for a 1/2 hour to firm it up. Also, forget the melon baller… can’t get it out without help from a toothpick. I just rolled small amount in my hand. FANTASTIC cookie. Just need to allow for extra time is all. 😀

I’m not sure…
I made this recipe… twice…and both times, my cookie dough did not look anything like it should have. I don’t have a stand mixer (can’t afford one right now) so I use a hand mixer and ive never had an issue before with choc chip cookies. These cookies would not roll at all and were almost…goopy. I couldn’t get them to hold a round shape – at all – so we had to end up baking them. It just wasn’t the same. It greatly upset me and I followed the recipe exactly. Each year, we have a “Cookie Party”, the kids and I. This is a tradition that is longstanding which was one of the few kind and happy memories I have of my late mother. It’s a tradition that I couldn’t wait to begin with my three kids. Finally, they’re not only old enough, but we have a place that allows me the ability to cook in my OWN kitchen and it’s an actual kitchen at that. We’ve been through so much! Homelessness, living in our car, having to bathe my kids in a gas station bathroom, and now, we have a stable home (and in the midst of a pandemic at that) that we can call ours. All I wanted was to continue a tradition that brought love and happiness to my heart as a young child growing up. This was a recipe that my oldest picked out and it didn’t go anywhere near as right as it should have. Although we ended up baking them and had hot chocolate chip cookies with a cold glass of milk, it didn’t go near as it should have as the recipe called. I’m saddened because I feel like I failed it and failed my kids. I know… I might just be being too hard on myself…but after 2020…i wanted something to just be right… something to just be perfect. Have a Merry Christmas everyone.
