Chocolate Beet Bundt Cake

Ingredients

  1. Nonstick cooking spray
  2. Cocoa powder, for dusting
  3. 2 cups all-purpose flour
  4. 1/2 cup whole wheat pastry flour
  5. 2 teaspoons baking soda
  6. 1/2 teaspoon baking powder
  7. 1/2 teaspoon salt
  8. 1 cup vegetable oil
  9. 4 ounces dark chocolate, coarsely chopped
  10. 4 eggs
  11. 2 cups pureed cooked beets
  12. 1 cup confectioners’ sugar
  13. 2 tablespoons milk
  14. 2 teaspoons vanilla extract

Instructions

  1. For the cake: Preheat the oven to 375 degrees F. Lightly grease a 10-cup bundt pan with nonstick cooking spray. Dust with cocoa powder and tap out the excess.
  2. In a medium bowl, combine the all-purpose flour, whole wheat flour, baking soda, baking powder and salt.
  3. Melt the oil and chocolate together over a double boiler, whisking to combine. Remove from the heat, and add the eggs one at a time, beating after each addition. Stir in the pureed beets. Add the dry ingredient mixture in three parts, stirring to just combine after each addition. Pour the batter into the prepared pan, smooth the top and place in the oven. Bake until a toothpick inserted in the center of the cake comes out clean, 45 to 55 minutes.
  4. For the glaze: In a medium bowl, whisk together the confectioners’ sugar, milk and vanilla extract until smooth. Drizzle over the cooled cake.

This has got to be the worst cake ever. The only thing it has going for it is the texture, and even then I think it’s only decent because I added some buttermilk because the batter seemed too dry at the end. The cake literally tastes like beets and dirt. It smells like chocolate, but doesn’t taste like chocolate, the recipe doesn’t even have sugar in it. Hard pass. Don’t bother with this.

I felt it was a little dry, I’m thinking maybe some liquid to the beet puree
