Chocolate-Avocado Banana Bread

Ingredients

  1. Cooking spray
  2. 1/2 small firm-ripe avocado, chopped
  3. 1 large egg
  4. 1 1/2 teaspoons pure vanilla extract
  5. 1 teaspoon orange zest
  6. 3 very ripe bananas, mashed
  7. 1 1/4 cups all-purpose flour
  8. 1/4 cup unsweetened cocoa powder
  9. 3/4 cup sugar
  10. 1 teaspoon baking soda
  11. 1 teaspoon ground cinnamon
  12. 1/2 teaspoon fine salt
  13. Large pinch ground allspice
  14. 1/2 cup plus 2 tablespoons semisweet chocolate chips

Instructions

  1. Preheat the oven to 350 degrees F. Spray a 9- by 5-inch loaf pan with cooking spray.
  2. Pulse the avocado, egg, vanilla and zest in a food processor until smooth. Transfer the mixture to a large bowl, and fold in the bananas.
  3. Whisk together the flour, cocoa powder, sugar, baking soda, cinnamon, salt and allspice in a medium bowl. Fold the flour mixture and 1/2 cup of the chocolate chips into the avocado mixture until just combined (it’s OK if there are some lumps). Transfer the batter to the prepared loaf pan, and sprinkle with the remaining 2 tablespoons chocolate chips. Bake until a toothpick inserted in the center comes out clean, 1 hour to 1 hour 10 minutes. Run a knife around the edges, and let cool completely in the pan on a rack. The bread can be stored at room temperature in an airtight container for up to 3 days.

“3 bananas”….please state what the measurement is. Bananas vary from small to very large.
“A large pinch of Allspice.” Again, what is the measurement?
All I could taste was the Allspice and had to throw the bread in the garbage.
My 7 ur old grandson had one small bite and reluctantly told me that it wasn’t very good. He is a human disposal and eats everything I bake/cook.

This is delicious!! A new favorite. I never follow recipes exactly. So, I added an extra banana, left chunky, and I used 2 whole avocados. Cocoa powder can be drying. But, it’s the MOST MOIST bread (cake) I’ve ever made.
