Ingredients
- One 14-ounce can sweetened condensed milk
- 8 ounces good-quality bittersweet chocolate
- 8 ounces good-quality semisweet chocolate
- 1 tablespoon vanilla extract
- 8 ounces good-quality milk chocolate, melted
- 2 tablespoons chipotle salt or regular sea salt
Instructions
- Heat the sweetened condensed milk, bittersweet and semisweet chocolates and the vanilla in a double boiler over medium-low heat until the chocolate is melted. Stir; the mixture will have a slight marshmallow texture. Remove from the heat, cover and refrigerate until chilled, 2 hours.
- Roll the chilled mixture in balls, then roll in the melted milk chocolate to coat. Sprinkle with the chipotle salt.

These taste so good. I got tons of complements. I just added some coconut oil with the milk chocolate when melting so it was easy to coat them.

Just put the finishing touch on these for a Quince de Mayo party tomorrow. The Chipotle sea salt is so good. I think they are going to be a hit!
The truffles are not as easy to make as demonstrated during the last 45 sec. of the Engagement Party episode. After chilling the chocolate base in the frig it helps to have a bowl of hot water to dip the melon ball scooper in. If the chocolate gets too cold scooping can be difficult. The melted milk chocolate (for the coating) needed some condensed milk to make it smooth. I also added a little warm milk. When it was finally at the ideal consistency I used a bamboo skewer to dip the truffles into the chocolate. I held a fork under it to detach the truffle and place it on parchment paper. The salt wouldn’t stick, even when I sprinkled it immediately. When I finally got the method down the truffles looked great, but it’s labor intensive. They taste great though.
