Ingredients
- 1 heaping teaspoon Miss Brown’s House Seasoning, recipe follows
- 1 teaspoon chipotle chile powder
- 1 teaspoon unsweetened cocoa powder
- 1 teaspoon packed dark brown sugar
- Four 6-ounce salmon fillets
- 1 tablespoon olive oil
- Flaky sea salt
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon sweet paprika
- 1 teaspoon kosher salt
- 1 teaspoon freshly ground black pepper
Instructions
- Preheat the broiler to low. Place an oven rack in the upper third of the oven. Line a baking sheet with parchment paper.
- Stir together the House Seasoning, chile powder, cocoa powder and brown sugar in a small bowl. Pat the salmon fillets dry and place skin-side down on the prepared baking sheet. Brush the top of each filet with olive oil and then rub the spice mixture over the top and sides.
- Broil until the salmon is not quite cooked through and feels firm to the touch, about 10 minutes. Sprinkle with sea salt before serving.
- Stir together the garlic powder, onion powder, paprika, salt and pepper in a small bowl.

This was good but I was expecting more of a cocoa flavor. I’d try it one more time.
I generally hate salmon. But, I love this recipe. Making it again for the 3rd time tonight.
My husband will not eat salmon. We have made this recipe twice and he loves it. Super good seasoning, thanks Miss Brown.
Instructions don’t include the cocoa, I’m assuming it gets mixed with the rest of the seasoning before rubbing on the salmon.
The recipe doesn’t say when to add the cocoa powder but I figured it out. Very good but please be mindful of the editing.
