Ingredients

  1. 3 cucumbers
  2. 2 cups of plain yogurt
  3. 1 clove garlic, minced
  4. 2 teaspoons honey
  5. 1 lemon
  6. Fresh or dried dill, to taste
  7. Water
  8. Salt
  9. Pepper

Instructions

  1. Peel cucumber and remove seeds. Grate to yield 3 cups. In food processor combine cucumbers, yogurt, garlic, honey and a squirt of lemon. Snip in dill. Process until smooth. Slowly add water until creamy. Season with salt and pepper and continue processing. Pour into a bowl. Chill. Serve.

Refreshing & good, but both hubby & I agreed it needs a little more seasoning. Perhaps a dash of nutmeg, more garlic & some Frank’s hot sauce. I didn’t add extra water- not needed-perfect consistency without it. The little bit left was actually tastier the next day. Great use of plentiful summer cucumbers!

I didn’t have a grater, so I chopped. And chopped. And chopped. In the end, it was worth it! Very refreshing. I used non-fat Greek yogurt and it turned out great.

That is a strange modification of the Bulgarian cucumber cold soup called Tarator in our country!

REMOVE honey from recipe!!!
ADD a small handful of crushed walnuts per serving.
TRY to mix/process yoghurt, garlic, spices together before adding crushed walnuts, grated or finely diced cucumber and finely cut dill.
Those three ingredients are not being “creamed” according to our original recipe. So it’s crunchy and you have something to chew. It’s a traditional summer soup in Bulgaria, and part of our cuisine 🙂

I came across this recipe last week and have made it twice already. I add more dill and garlic and garnish with olive oil and basil. It is a great appetizer for fish.

I think it is wonderful on a hot summer day. A great starter to a light meal. Cool, crisp and creamy. A great use of an abundance of cucumbers.
