Ingredients
- 2 tablespoons extra-virgin olive oil
- 2 pounds ground beef
- Kosher salt and freshly ground black pepper
- 1 medium onion, chopped
- 1 small red bell pepper, chopped
- 1 small yellow bell pepper, chopped
- 2 tablespoons chili powder
- 4 cloves garlic, chopped
- One 15.5-ounce can fire-roasted diced tomatoes
- One 15.5-ounce can chili beans, undrained
- 1 1/2 cups frozen corn
- 1 cup beef broth
- Half of a 30-ounce bag frozen French fries
- 2 cups shredded Cheddar
- Sliced scallions and sour cream, for garnish
Instructions
- Preheat the oven to 400 degrees F.
- Heat a large skillet over medium-high heat and add the oil. When the oil is hot, add the ground beef, season with 1/2 teaspoon salt and several grinds of black pepper and cook, crumbling it with a wooden spoon, until browned, about 6 minutes.
- Reduce the heat to medium and add the onion and bell peppers. Cook until the vegetables begin to soften, about 5 minutes. Sprinkle with the chili powder and garlic and stir to incorporate. Add the tomatoes, beans with their liquid, corn and broth. Increase the heat to bring to a rapid simmer and cook until thickened, about 3 minutes.
- Pour the mixture into a 9-by-13-inch baking dish. Top with the fries. Bake until the fries are browned and crisp, 30 to 35 minutes. Sprinkle with the Cheddar and bake until the cheese is bubbly, 5 to 7 minutes more. Serve topped with scallions and sour cream.

More salt generally throughout and added a tablespoon of ancho powder. Really delicious! I simmered for quite a while and reduced it to more of a goulash.
Hubby looked at it and wasn’t sure about it. But after eating it, he told me he really liked “whatever that was you made.” That’s saying a lot because he usually doesn’t like beans in chili. This will go on the list of keepers.

So , I almost didn’t make this based on one review, but I’m glad I did. We are always looking for what we call football food to have while watching games….not foodie food but yummy fun food. This certainly fits the bill. My husband took one bite and said it was yummy and liked it a lot. I did double the chili powder and added crushed red pepper because we like more spice BUT I used leftover French fries (which my husband said a hard no to) but it was fine! I did cover it in the oven since the fries were already cooked. We will add this to our football game menus.
At first I gave it 1 star. That was not fare. See I’m a natural cook. Yes cooking is my favorite pass time. Yes I sleep thinking of food. Ok I’m a foodie. Alright I cooked for a living. My Dad was a amateur chef. But they, people I cook for have put a standard on me that my food has to meet. This dish didn’t come close. So I have but no other choice but to take it of my cooking list. Unless I come up with a way to fix it. Don’t get me wrong. I don’t normally cook for someone who has tied my hands as much as the person has. Nothing pickled, sweet and sour, pineapple, coconut, beans that’s any thing that would have some resemblance of a bean. It was close to tamale pie crossed with tator tot casserole.

Was a really good recipe, the family devoured it. Just wanted to say though that 15oz of French fries isn’t nearly enough. We used the whole 30oz bag and it was perfect.
This was really good. I think it could some heat, like cayenne or chili flakes though!
