Chicken with Quick Citrus Pan Gravy

Ingredients

  1. 2 (8-ounce) boneless, skinless chicken breasts, lightly pounded
  2. Coarse salt and cracked black pepper
  3. 2 teaspoons olive oil
  4. 4 garlic cloves thinly sliced
  5. 1/2 cup orange juice
  6. 1 teaspoon fresh thyme leaves

Instructions

  1. Season chicken on both sides with salt and pepper. Heat olive oil in a 10-inch non-stick pan over medium high. Add the garlic and cook until the garlic begins to turn golden, about 1 minute. Do not let the garlic burn, keep moving it around. Place the chicken on top of the garlic and cook until golden brown, about 2 minutes. Turn the chicken over and add the orange juice and thyme. Cook until the chicken is cooked through and the orange juice is slightly reduced, about 2 to 3 more minutes. Remove the chicken from the pan and place on a cutting board. Reduce the orange juice more at this time, if necessary.
  2. Slice chicken into thin strips. Pour sauce over chicken. Serve immediately.

delicious and simple! however there’s not a whole lot of heat in this recipe, so i kicked it up with some cayenne pepper on my chicken with the salt and pepper. (i also didn’t have orange juice, but pineapple juice works just as well! tastes great with the cayenne too. served on a bed of rice, which really absorbed the juice and made it all extra yummy!

This was a great recipe. It was very quick and easy. I couldn’t believe how tasty it was considering the preparation time. I followed the recipe with the exception of using dried thyme (still good) and my orange juice evaporated before the chicken was done. I just added a bit of water which cooked down into the juice by the time the chicken was done. The chicken was still very flavorful as was the “gravy.” I served this with parmesan yukon gold mashed potatoes and a salad and it made a great meal!
