Chicken with Peach and Melon Salsa

Ingredients

  1. 1 (15-ounce) can peach halves, drained and rinsed
  2. 4 boneless, skinless chicken breasts
  3. 4 teaspoons Jamaican Jerk seasoning
  4. 1 cup pre-cut melon medley, diced
  5. 1 tablespoon diced pimientos
  6. 1 tablespoon freshly chopped cilantro leaves
  7. 1 tablespoon lime juice
  8. 1/2 teaspoon salt

Instructions

  1. Heat a grill pan over medium-high heat.
  2. Place peaches halves on grill pan and grill 2 to 3 minutes per side. Set aside to cool and then dice into small pieces.
  3. Season both sides of each chicken breast with 1 teaspoon Jamaican jerk seasoning. Place chicken breasts in pan and grill for 6 minutes per side, or until cooked through.
  4. Meanwhile, in a medium bowl, combine grilled peaches and remaining ingredients. Stir thoroughly.
  5. Serve chicken topped with peach and melon salsa.

I cooked this and had an awesome dinner. Served with chicken couscous and black beans. This was packed with flavor! I seasoned with Cajun season instead of Jamaican jerk, blackened chicken season and spicy Monterey grill mates. I was pleasantly surprised at how the lime juice kicked it up a notch for the salsa. Was a hit with the family and little did they know that it was all amazingly healthy!

I served this with jasmine rice, spinach salad and bread. The salsa is a nice addition to the rice. I can see making the salsa and serving it with rice for your vegetarian/vegan friends.

My wife and I loved it. I didn’t have the jerk seasoning but I used my own spices. The salsa was great I had to add a little salt to kick up the flavor on the melons.

We grilled the chicken and peaches outside, and it just made it all the better with the smokeyness over the jerk seasoning. Paired with a nice spinach salad, this is a perfect, light, summer dish that you can make year round!

Not being a big fan of melons I decided to try this recipe anyway since it was light and healthy. The chicken was very nice and the salsa was ok. Would probably be great if you are a melon fan but I doubt I will make this again since no one in my family would even try it except me

Was looking for something quick and easy on a weeknight with what I had on hand. Spicy and sweet, this dish was a hit with the table and unusual enough to garner a few praises. I did omit the melon as being a bit over-the-top (plus I didn’t have any!) but just didn’t tell anyone.
