Spice is added to sweet potatoes! The addition of coconut oil, ginger, roasted garlic, caramelized onions, and a hint of spice and turmeric makes these mashed potatoes wonderfully delicious. These amazing root vegetables don’t require any salt or sugar! In order to balance the textures of the onions and garlic, crème fraîche adds a creamy texture. Because I am constantly exploring for new ways to include ginger, curry, and turmeric in my diet, I have never had this dish anyplace other than at home. I adore every component in this dish!

Ingredients

  1. 2 ½ teaspoons vegetable oil
  2. 6 (6 inch) corn tortillas, cut into 1/2 inch strips
  3. 3 cups chicken broth
  4. ½ teaspoon ground cumin
  5. ½ teaspoon chili powder
  6. ½ teaspoon dried oregano
  7. 1 (15 ounce) can black beans, rinsed and drained
  8. 1 (15 ounce) can whole kernel corn, drained
  9. 2 skinless, boneless chicken breast halves, cut into bite size pieces
  10. ½ cup salsa
  11. ½ cup chopped fresh cilantro

Instructions

  1. Heat 2 teaspoons of the oil in a large pot over medium heat. Add half of the tortilla strips, stirring often, until crisp. Drain on paper towels. Repeat with remaining 1/2 teaspoon of oil and remaining tortilla strips and set aside.
  2. Add the broth, cumin, chili powder and oregano to the pot. Raise heat to high and bring to a boil. Add the beans, corn, chicken and salsa. Reduce heat to low, stir and simmer for about 2 minutes, or until chicken is cooked through and no longer pink inside.
  3. Add the cilantro and half of the reserved tortilla strips. Ladle into individual bowls and garnish each bowl with some of the remaining strips.

Good recipe. I did add a can of Rotel ciltrano lime tomatoes, a little lime juice and zest, garlic and a couple of scallions as it cooked. I cooked the chicken in broth (which I used later in the soup) and shredded it.

I excluded the oregano and cilantro and added Tortilla Soup Starter Chicken Broth and substituted the salsa with Petite Diced Tomatoes. Also I used Santa Fe Tortilla Strips Salad Toppers to eliminate having to make tortilla strips. It came out so delicious. A must try.

I love this recipe. It is so quick and easy AND when I think ahead of time I just put it in the crockpot! Always amazing. Sometimes I will add some onions just for taste. Great served with some chips and shredded cheese.

This recipe is genius! I used unsalted tortilla chips from Trader Joe’s as the broth had enough sodium for me! I also swapped the two chicken breasts for three thighs. At the end I added a teaspoon or so of red crushed chili flakes for a kick. Topped with diced avocado, radish, cilantro & sour cream. So easy, so yummy can’t wait to wait make again

This soup was easy to make and delicious! I added a fresh red onion and 2 jalapeño peppers for a kick ?? I also used rotisserie chicken instead of raw. This is definitely a favorite!

This recipe was awesome, I made some adjustments to it, I added a little more chicken broth, added in some rice along with a large can of diced tomatoes, and topped it off with French’s crispy fried onions instead of the tortilla chips and cheese OMG it was so awesome

Only change I made was to use salsa verde instead of salsa as I had none on hand and I added a can of diced green chiles. I baked my chicken breasts in the oven at 350 for 30 minutes while I fried my tortillas and boiled/simmered the soup with everything except the chicken. Once the chicken was done, I let it sit five minutes then cut it and put in the soup to simmer for a few minutes. Super quick! Super easy!

This soup has an awesome taste. I added sweet onion and a green pepper and lemon juice. I would defiantly make again.
