Because I was missing the components for my typical sauce, I quickly came up with this recipe for ground chicken spaghetti. I chose to submit this recipe as my first one since I was so pleased with how it turned out. This results in a very thin sauce. Although I strongly advise you to try it as described because it is so delicious, you can add 1/2 can of tomato paste or even use crushed tomatoes in place of whole ones if you prefer a heartier sauce. Serve over pasta that is al dente. I wish you enjoyment!

Ingredients
- 1 tablespoon extra-virgin olive oil
- 1 pound ground chicken
- 1 small onion, diced
- 1 clove garlic, crushed
- 2 teaspoons dried basil
- 1 pinch kosher salt to taste
- 1 pinch ground black pepper to taste
- 1 (14 ounce) can whole peeled tomatoes
- ¼ cup grated Parmesan cheese
Instructions
- Heat olive oil in a large skillet over medium-high heat. Cook and stir chicken and onion together in hot oil until chicken has completely browned and onions tender, 7 to 10 minutes. Stir garlic, basil, kosher salt, and black pepper into chicken mixture; cook for 1 minute.
- Blend tomatoes in a blender until smooth; pour over chicken mixture and bring to a simmer. Cook mixture at a simmer until hot and sauce has thickened slightly, about 10 minutes.
- Sprinkle Parmesan cheese over mixture; stir.

Basic spaghetti – nothing too spicy. Good way to use some ground chicken. Modifications I made were as follows: used 1t each of basil and Italian seasoning, and added a splash of red wine (cab). Also added fresh white mushrooms.
I made this exactly by the recipe. In my opinion, the spices need to be different. Something in addition to the basil. Perhaps oregano and Italian seasoning, maybe? It also needs more than one clove of garlic.
The recipe is a great base but for more flavour I added red wine and Italian seasoning…..turned out great! Thanks!
