Ingredients
- 4 (8-ounce) boneless chicken breasts
- Olive oil, for sauteeing
- 1 cup chopped medium onion
- 4 cherry peppers, seeded and sliced
- 16 mushrooms, chopped
- 3 cups black oil cured olives and capers
- Dash paprika
- 3 – 4 ounces butter
Instructions
- Cut the chicken into pieces. Place a saute pan over medium-high heat. Add enough oil to lightly coat the bottom of the pan and heat. Add the chicken and brown on both sides. Add the onion and the cherry peppers. Discard any excess oil. Add the mushrooms, olives, and capers. Add a dash of paprika and 3 to 4 ounces lightly salted butter. Cook on a high flame until the butter is completely melted, mixing to keep the butter from separating.

Reviews
Villa Di Roma is the greatest Italian restaurant for insanely addictive dishes. It’s an institution! And this Chicken Sicilian recipe will never disappoint!! You need to implement this recipe in your repertoire. Your loved ones will thank you!
With so few ingredients and lack of full cooking instructions; this was surprisingly really tasty. I thought there would be too many mushrooms but since they are chopped they really cook down so it doesn’t seem like too much. I added less than 3 ounces of butter and felt this was a good amount to cut down on the fat but not take away from the richness of the sauce. My anti-chicken husband even wants this to go into the rotation.
Good
We traced Rachel Ray’s steps in Phila and this dish is to die for!! If you have never moaned through a meal before, you will now.
Loved it even though I had to substitute a couple of ingrediants.
I’ve never eaten at the Villa di Roma restaurant, but if all their food is this good, I’m ready to go!
I was looking for something different to do with chicken and found this. It was different than my usual style of cooking, so I think maybe I’ve found a new style!
Simple to make. Didn’t have the black olives so I used Queen size green olives stuffed with piminto. turned out excellent.
I grew up down the street from the Villa di Roma and it is one of my favorite restaurants not to mention the owners are friends of the family. My mother makes this dish and it comes out delicious
Absolutely delicious. I used green Sicilian olives instead, but I’m sure it made no difference. It is great with mashed potatoes and I high recommend trying this recipe. My family loved it.
