I adore the “authentic” spring rolls I order so frequently from my welcoming, local Vietnamese eatery. However, I’m just demonstrating a method in this recipe, and you can use anything you have on hand to stuff the rolls. If a big grocery shop doesn’t have rice paper wrappers in its Asian food section, you can simply find them online.

Ingredients
- 1 rotisserie chicken, boned and chopped
- 1 (8 ounce) can crushed pineapple, drained
- 2 stalks celery, finely chopped
- 1 cup creamy salad dressing (such as Miracle Whip®)
- ½ cup sweetened dried cranberries (such as Craisins®)
- ½ cup mayonnaise
- ½ cup chopped apple (Optional)
- ¼ cup chopped green onion
- 1 tablespoon finely chopped fresh rosemary
- 1 tablespoon chopped fresh dill
- 1 pinch seasoned salt, or to taste
- salt and ground black pepper to taste
Instructions
- Mix chicken, pineapple, celery, salad dressing, sweetened cranberries, mayonnaise, apple, green onion, rosemary, dill, seasoned salt, salt, and pepper together in a large bowl. Refrigerate until ready to serve.
- If you like it moister, add a little bit more mayonnaise or Miracle Whip(R).
- You can use dried dill instead of fresh and chives instead of green onions.

Reviews
I really enjoyed this recipe and it was great with my garden fresh tomatoes. However, I prefer eggs in chicken salad. The only thing I did differently was: 1. Omitted dried cranberries 2. Used a shallot instead of green onions. 3. I used fresh thyme instead of rosemary
