Chicken Salad with Apples, Grapes, and Walnuts

Walnuts add added crunch to this chicken salad with apples, while grapes add a touch of delicate sweetness. Since I couldn’t find a recipe I liked and I had leftover barbecued chicken breasts, I experimented and came up with this.

Ingredients

  1. 4 cooked chicken breasts, shredded
  2. 2 medium Granny Smith apples, cut into small chunks
  3. 2 cups chopped walnuts, or to taste
  4. ½ red onion, chopped
  5. 3 stalks celery, chopped
  6. 3 tablespoons lemon juice
  7. ½ cup vanilla yogurt
  8. 5 tablespoons creamy salad dressing (such as Miracle Whip®)
  9. 5 tablespoons mayonnaise
  10. 25 seedless red grapes, halved

Instructions

  1. Toss together chicken, apples, walnuts, red onion, celery, and lemon juice in a large bowl.
  2. Whisk together yogurt, salad dressing, and mayonnaise in a small bowl; pour over chicken mixture and stir to coat. Gently fold in grapes.

It made a ton! I used rotisserie chicken from Costco, which was good, but I hate the vanilla yogurt in here. Made it way too sweet for me. I’ll tweak it next time and it will be perfect. Thanks for the recipe!

I followed the recipe but substituted green onions for red onion. I only made 1/2 of the recipe for 2 people and I think it needs salt. If I make it again, I will add 1/2 tsp. salt to the dressing. I ended up adding salt to my serving. I do love it and I’ll make it again probably.

I like the idea of using yogurt rather than a whole bunch of mayonnaise. I did not have miracle whip, so I used sour cream. It turned out great! For the nuts, I used glazed pecans, which went very well with the yogurt dressing.

This is definitely delish! Great for lunch on a hot day, or evening. The only thing I did differently is cut the recipe in half. Still makes plenty for my husband and myself.

Delish, made according to directions with exception of walnuts, didn’t have any, used slivered almonds. Makes a big bowl! So good!

I loved it!! I added Mandarin oranges and left out the onion. I also used Tyson Frozen Oven Baked Roasted chicken chunks which are very good. My family and friends loved it!!!! 🙂

I roasted off a couple extra chicken breast when I made roasted chicken (on the bone) I think it taste best on the bone much more tender and juicy. I added 1/4 cup of roasted pecans (five minutes at 350°). I used an organic peeled + chopped “pink lady” apple. I left out the celery, because I didn’t have any, + I added a handful of low sugar, dried cranberries. I mixed 2Tbsp.Chipotle aïoli with a 1/4 cup of Mayo + added 1/2 tsp. “Everything bagel” seasoning. I plan on taking it on a canoe trip, and wrapping this delicious chicken salad, in low carb wraps. So yummy and easy!! Thank you!

This recipe is almost a dupe from Cafe Iz (Birmingham, AL) chicken salad with apples. I live in Europe now and have been looking for a similar recipe for years. Awesome. The only change I made was omitting grapes and perhaps a bit more liberal on the vanilla yogurt.

I skipped the onions, used dried cranberries instead of grapes (out of season) and lime juice instead of lemon and added fresh cracked peppercorn. Really excellent! Thank you for sharing

I made this with the following: 1 rotisserie chicken shredded, 1 red apple, 2 celery stalks, 1/4 cup walnuts, Half a lemon juiced. Dressing:5oz container plain Greek yogurt, 1/2 cup mayonnaise 2tsp vanilla,1/3 tbspn sugar, 15ish grapes halved So good! Served with crackers.

My grandma made this exact same recipe for as long as I can remember. I’m 61 years old, and I started making this since I was about 6 or 7 years old. This recipe isn’t really”original” (except maybe the part about using leftover BBQ chicken) must have been around for many many years because, she got the recipe from her mom, it was part of the huge recipe box passed down to me for generations! it’s awesome!
