For English tea or social occasions, finger sandwiches are a perennial favorite. These sandwiches with chicken, apples, and walnuts are incredibly affordable, delectable, and simple to prepare with a food processor.

Ingredients

  1. 1 (12.5 fl oz) can white chunked chicken breast, drained
  2. 1 large Granny Smith apple – peeled, cored, and cut into small pieces
  3. ⅓ cup walnut halves
  4. ⅓ cup mayonnaise
  5. ½ teaspoon dried basil
  6. ¼ teaspoon dried dill weed
  7. 1 pinch salt
  8. 10 slices good-quality white bread, crusts removed

Instructions

  1. Combine chicken, apple, walnuts, mayonnaise, basil, dill, and salt in the bowl of a food processor and pulse until all ingredients are blended together.
  2. Spread chicken mixture onto bread and place a slice on top to form a sandwich. Repeat with remaining slices and mixture. Cut sandwiches into quarters and serve.
  3. You can use wheat bread instead of white.

These are a nice, very mildly flavored chicken salad sandwich. I followed the recipe other than subbing almonds for walnuts as I realized at the last moment that I didn’t have any on hand. After trying the recipe as written, I did end up adding a little extra mayo, pepper, and a touch of garlic powder. The flavors of basil and dill honestly get lost, others may want to consider increasing amounts. The apple is lovely!
