Ingredients

  1. 4 (6 ounce) skinless, boneless chicken breast halves
  2. ¼ cup all-purpose flour
  3. 1 tablespoon butter
  4. 1 tablespoon olive oil
  5. ½ cup white wine
  6. ¼ cup fresh lemon juice
  7. 2 tablespoons capers
  8. 2 teaspoons minced garlic
  9. ¼ teaspoon salt
  10. ¼ teaspoon freshly ground black pepper
  11. 2 tablespoons chopped fresh flat-leaf parsley

Instructions

  1. Place each chicken breast between 2 sheets of heavy-duty plastic wrap. Pound breasts to 1/2-inch thickness using a meat mallet or small heavy skillet.
  2. Spread flour into a wide, shallow dish. Press chicken into flour to coat completely.
  3. Melt butter with olive oil in a large skillet over medium-high heat; cook chicken in hot butter mixture until no longer pink in the center and the juices run clear, 3 to 5 minutes per side. Remove chicken from skillet to a serving platter and cover with a lid to keep warm.
  4. Pour white wine, lemon juice, capers, and garlic into the pan. Bring the liquid to a boil while scraping the browned bits of food from the bottom of the pan with a wooden spoon; cook at a boil until slightly thickened, about 2 minutes. Season the mixture with salt and pepper.
  5. Drizzle sauce over and around the chicken; garnish with parsley.

Easy , fast… and delicious..!……Makes an elegant presentation….. ps…..I add the chicken back into the pan…and let it sautee in the sauce for a couple more minutes …so it absorbs the flavor of the sauce…I also added some small slices of a crimi mushrooms…..

Really liked it. Had all the ingredients. Needed minor tweaking so I couldn’t do 5 stars. Once I tasted the overwhelming lemon flavor, I tweaked it and ended up cooking the sauce down for about 6-7 minutes. Added shallots, extra garlic (lots), freshly ground pepper and about 1/4 cup chicken broth. Last couple minutes I remembered I had mushrooms so added a few. Only thing I will remember to do next time is to put the chicken back into the sauce for a minute to warm it back up. I also used brown rice flour instead of all purpose and really love how light of texture it gives to the chicken. Its undetectable but adds something.

The sauce was too thin and not enough. I whisked together an additional 1/4 C of white wine & 1/4 C water with a TBSP flour. Whisked into the pan until thickened. I served with couscous and asparagus.

This was very tasty. I made it as directed except for me the sauce was a bit watery so I mix in some corn starch in a bit of water. The capers and white wine added just the right amount of tang. This recipe is now added to my rotation.

This recipe is great! I made it per instructions but forgot the garlic (we love garlic) but otherwise followed recipe. My husband and I loved it. Will add to 2-3 week dinner rotation. I used pre-sliced chicken breasts from grocery store. Served with butter lemon potatoes and green beans. Yummy!

Family loves this recipe as we serve with a side of pasta. Only thing I do differently is to add a Tbs of Italian Seasonings to the flour and then dredging chicken.
