Ingredients

  1. ¼ cup butter
  2. ¼ cup olive oil, or more as needed
  3. 1 (16-ounce) package frozen diced hash brown potatoes (such as Ore-Ida), thawed
  4. 3 skinless, boneless chicken breast halves, diced
  5. 1 small onion, chopped
  6. 1 green bell pepper, chopped
  7. ¼ cup chicken broth, or more as needed
  8. 1 pinch Montreal-style steak seasoning, or to taste
  9. 1 pinch garlic powder, or to taste
  10. 1 pinch seasoned salt, or to taste
  11. 1 bunch broccolini, chopped
  12. 1 cup shredded smoked Cheddar cheese

Instructions

  1. Melt butter and olive oil together in a large frying pan over medium heat. Cook and stir potatoes, chicken, onion, green bell pepper, chicken broth, steak seasoning, garlic powder, and seasoned salt in the hot butter-oil mixture until chicken is no longer pink in the center and liquid is evaporated, 15 to 20 minutes. Add more olive oil if mixture becomes dry.
  2. Stir broccolini and Cheddar cheese into chicken hash; cook until broccolini is tender and Cheddar cheese is melted, 2 to 3 more minutes.

I used O’Brian potatoes with onions and peppers already in it, so didn’t have to chop veggies. Sautéed the chicken with Montreal seasoning and a dash of soy sauce, set it aside and cooked the potatoes in the same pan. Added cooked chicken to cooked potatoes to heat through. Threw in some frozen/thawed corn with the cheese instead of broccoli. Very tasty.

I used those hats Browns that are dried out where all you add is water love them for camping as well great produced. I added mushrooms I love mushrooms but followed the recipe. It was hit I love it so does my hubby it was fast and easy and tastes awesome. I give this five stars.

Kids and hubby loved this! Unfortunately, I didn’t have the green veggies. I used less oil and less butter and I used cooked dark meat chicken.

So I changed this recipe a bit and found it to be delicious! I roasted some brussel sprouts with garlic and onion and then used this as the vegetable instead of the brocollini or peppers. It was delicious!

I just made this for my family and it is wonderful!! I would recommend cooking the chicken onion and peppers in the oil and butter before you add the potatoes. Awesome under an hour dinner!!

A nice recipe. I used fresh potatoes, and because I had some to use up and too me that is what hash is for I added black beans and spinach to the mix. Now I have nice go to recipe for left over chicken and potatoes. Thanks for posting.
