Ingredients

  1. 4 skinless chicken breast halves on the bone, about 2 pounds
  2. Salt and freshly ground black pepper
  3. 2 teaspoons olive oil
  4. 1 medium onion, thinly sliced
  5. 1 red bell pepper, thinly sliced
  6. 1/2 pound white mushrooms, thinly sliced
  7. 2 garlic cloves, minced
  8. 1/2 cup dry white wine
  9. 1 (14 1/2-ounce) can whole tomatoes in juice, chopped and juice reserved
  10. 1/2 teaspoon dried oregano
  11. 1/8 teaspoon red pepper flakes or more to taste

Instructions

  1. Rinse the chicken and pat dry with paper towels. Season the chicken with salt and pepper.
  2. Heat the oil in a saute pan over moderately-high heat. Brown the chicken on both sides, about 8 minutes. Remove the chicken.
  3. Reduce the heat to moderate. Add the onion and pepper, cover and cook, stirring occasionally, until the vegetables begin to soften, about 5 minutes. Add the mushrooms and cook, uncovered and stirring occasionally, until the mushrooms begin to brown. Add the garlic and cook, stirring, for 30 seconds. Add the wine and cook until reduced by half. Add the tomatoes and juice, oregano, red pepper flakes and 1/4 teaspoon of salt and simmer the mixture covered for 10 minutes.
  4. Return the chicken breasts to the pan and simmer, covered, until the chicken is just done, about 20 minutes longer.

This recipe is all that and then some!!!  Easily one of the best recipes I have tried, among hundreds, from FN.  Also, it is easy and foolproof!  I did use more garlic and boneless skinless breast, just personal preference.  I was worried about the oregano, but it totally works!!  New family favorite and easy enough for a weeknight meal.  Thanks Ellie 🙂

Very delicious and easy! Make sure you cook in a large skillet (I used a wok), because even though your vegetables will reduce in size, there are a lot of good things to fit into this dish!

Good recipe but husband likes some sauce to coat his pasta so next time will add part of a jar of marinara sauce. Otherwise I thought it was good as is!

Great recipe! Bone-in chicken makes the chicken extra juicy. Would definitely serve with whole-wheat pasta next time. The sauce is fantastic.
