Chicken Butternut Squash Posole

This comes together quickly and has a wonderful aroma while cooking. You can experiment with several salsas to add various taste profiles. As garnishes, you can add cheese, green onions, and cilantro.

Ingredients

  1. 1 pound boneless chicken breasts, cut into 2-inch pieces
  2. 1 pound butternut squash, peeled and cut into 1-inch pieces
  3. 2 (15 ounce) cans red beans, drained and rinsed
  4. 1 (28 ounce) can hominy
  5. 3 cups low-sodium chicken broth
  6. 1 (16 ounce) jar salsa
  7. ½ (12 fluid ounce) can or bottle beer
  8. 2 teaspoons dried Mexican oregano
  9. ½ cup heavy whipping cream (Optional)

Instructions

  1. Combine chicken, butternut squash, red beans, hominy, chicken broth, salsa, beer, and Mexican oregano in a slow cooker.
  2. Cook on Low for 7 1/2 hours (or on High for 3 1/2 hours). Stir cream into soup and continue cooking for 30 minutes more.
  3. Can omit chicken and use veggie broth for a vegetarian version.
  4. Pinto beans, black beans, or a mixture of beans can be used in place of red beans.
  5. Sweet potatoes can be substituted for the butternut squash.
  6. Regular oregano can be used in place of the Mexican oregano.
  7. I use dark beer, but any variety will do.

This was so yummy! I followed the recipe, and added onion and garlic and chili powder, per other’s suggestions. I used leg and thigh meat, and pinto beans because I had them already. I did not have any beer, so just used stock. I also used a tomatillo salsa, personal preference. I did not add the whipping cream, but I am sure that would have added another layer of flavor. Great way to use up butternut squash!

Overall this was a tasty dish, however it was a tad bland. I added chili powder, garlic salt, half a chopped onion, and used chicken thighs to add more flavor.

As the recipe is written, it is a nice but rather bland soup. I used a roasted garlic salsa that I really like but it didn’t add nearly enough spice to the soup. I have never had a posole that didn’t have some cumin, chili.. etc.. and I really felt it needed that. I did like the butternut in this. I did not add the optional cream. After I jazzed this up with some spices, I really did enjoy this. so do make this.. but have your spices ready
