A sweet tropical treat that makes you feel like you are sunbathing in the tropics. It doesn’t sound very delicious when you read the ingredients, but it is fantastic. By far, my favorite smoothie. created by one of my friends.

Ingredients
- 2 slices bacon
- ⅓ cup shredded rotisserie chicken
- coarse salt and ground black pepper to taste
- 1 avocado
- 1 tablespoon lemon juice
- 1 clove garlic, minced
- 1 tomato, chopped
- 1 onion, chopped
- 2 lettuce leaves, or as needed
Instructions
- Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon slices on paper towels, reserving grease in skillet.
- Add chicken to skillet and stir to coat with bacon drippings. Season with salt and pepper.
- Mash avocado in a bowl and season with lemon juice, garlic, salt, and pepper. Add tomato and onion to taste.
- Divide cooked bacon, chicken, and avocado spread between lettuce leaves and wrap up.

Simple and delicious! My husband does not like tomatoes so I used salsa instead. I do like tomatoes but have to admit that I think the salsa worked better and added more flavor. What a great way to use up leftover chicken!
